🍽️ Pan-fried Skate Fillets with Lemon, Capers, and Beans

Ingredients
- 4 Ray fillets (à 140 g, skinless)
- 400 g green beans
- 2 Lemons
- 5 Thyme sprigs
- Salt
- Pepper (from the mill)
- 3 tbsp Butter
- 2 tbsp Capers
Instructions
- 1. Rinse the fish fillets under running water.
- 2. Pat the fillets completely dry with kitchen paper.
- 3. Clean the beans and wash them as well.
- 4. Peel one lemon with a knife.
- 5. Cut out the lemon fillets from the peeled lemon.
- 6. Squeeze the rest of the lemon to get the juice.
- 7. Wash the thyme.
- 8. Crumble the thyme leaves off the stems.
- 9. Bring water with salt to a boil.
- 10. Cook the beans in the boiling salted water for about 10 minutes.
- 11. Season the fish with salt and pepper.
- 12. Fry the fish in hot butter.
- 13. Fry each side of the fish for about 3 minutes until golden brown.
- 14. Turn the fish once while frying.
- 15. Add the lemon juice to the fish in the pan.
- 16. Add the capers to the pan.
- 17. Add the thyme to the pan.
- 18. Add the lemon fillets to the pan.
- 19. Place the finished fish fillets on the plates.
- 20. Distribute the capers over the fillets.
- 21. Place the lemon fillets on the fillets.
- 22. Sprinkle the thyme over the fillets.
- 23. Pour the lemon butter from the pan over the fillets.
- 24. Let the beans drain.
- 25. Arrange the beans next to the fish fillets on the plates.
