🍽️ Roast Beef Rolls

Ingredients
- 2 eggs
- 100 g pickled pumpkin (jar)
- 3 sprigs coriander
- 150 g low-fat quark
- 1 small organic lemon
- salt
- pepper
- 150 g Napa cabbage
- 10 slices roast beef (without fat edge)
Instructions
- 1. Poke small holes into the eggs with a fork.
- 2. Place the eggs in boiling water.
- 3. Boil the eggs for 8 to 9 minutes until hard-boiled.
- 4. Remove the eggs from the water and rinse them immediately with cold water.
- 5. Peel the cooled eggs.
- 6. Finely chop the peeled eggs.
- 7. Place the pumpkin in a sieve and let it drain.
- 8. Cut the pumpkin into coarse cubes.
- 9. Wash the coriander leaves.
- 10. Shake the coriander dry.
- 11. Pluck the leaves off the stems.
- 12. Finely chop the coriander leaves.
- 13. Place the quark in a bowl.
- 14. Add the diced pumpkin to the quark.
- 15. Add the chopped coriander leaves to the quark.
- 16. Wash the lemon.
- 17. Dry the lemon with a cloth.
- 18. Finely grate the lemon zest.
- 19. Squeeze the juice from the lemon.
- 20. Add the lemon zest and juice to the quark mixture.
- 21. Mix everything well together.
- 22. Season the mixture with salt.
- 23. Season the mixture with pepper.
- 24. Fold the chopped eggs into the quark mixture.
- 25. Remove the outer leaves of the Napa cabbage.
- 26. Wash the Napa cabbage.
- 27. Shake the Napa cabbage dry.
- 28. Cut the Napa cabbage into very fine strips using a large knife.
- 29. Place the Napa cabbage strips in a bowl.
- 30. Lightly salt the Napa cabbage.
- 31. Knead the Napa cabbage vigorously for 3 to 4 minutes.
- 32. Ensure the Napa cabbage becomes pliable.
- 33. Place the roast beef slices on the work surface.
- 34. Lightly salt the roast beef slices.
- 35. Lightly pepper the roast beef slices.
- 36. Spread 1 to 2 teaspoons of the pumpkin-quark filling on each slice.
- 37. Top each slice with some Napa cabbage.
- 38. Roll each slice tightly.
- 39. Place the rolls on a plate.
- 40. Garnish the rolls with the remaining Napa cabbage.
- 41. Serve the rolls.
