🍽️ Juicy Roast Beef with Creamy Sauce

Ingredients
- 1 kg Roast Beef
- 2 tbsp vegetable oil
- 1 tbsp hot mustard
- 1 tsp coriander seeds
- 1 tsp peppercorns
- 1 tsp dried thyme
- salt
- 250 ml meat broth
- 2 tbsp crème fraîche
- 3 tbsp grainy mustard
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 140 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the roast beef briefly and pat it completely dry with a kitchen towel.
- 3. Heat oil in a large pan and sear the meat on all sides until brown.
- 4. Remove the meat from the pan and set it aside.
- 5. Coat the entire roast beef evenly with mustard.
- 6. Grind coriander seeds and pepper finely in a mortar.
- 7. Finely chop the thyme and mix it with the ground spice and about one teaspoon of salt.
- 8. Rub the meat all over with this spice mixture.
- 9. Place the meat on a wire rack. Put a drip pan underneath to catch rising fat drops.
- 10. Slide the rack into the preheated oven.
- 11. Roast the meat for about 40 to 50 minutes. The time depends on the thickness and desired doneness.
- 12. Check the core temperature. For a pink center, the thermometer should read about 55 degrees Celsius.
- 13. Remove the meat from the oven.
- 14. Wrap the meat briefly in aluminum foil and let it rest.
- 15. Pour the broth into the pan you seared the meat in to deglaze and lift the browned bits (fond).
- 16. Bring the sauce to a brief boil.
- 17. Remove the pan from the heat.
- 18. Stir the crème fraîche and some mustard into the sauce.
- 19. Season the sauce to taste with salt and pepper.
- 20. Slice the roast beef.
- 21. Serve the meat slices together with the warm sauce.
