  1. 1. Preheat the oven to 140 degrees Celsius using the top and bottom heat setting.
  2. 2. Rinse the roast beef briefly and pat it completely dry with a kitchen towel.
  3. 3. Heat oil in a large pan and sear the meat on all sides until brown.
  4. 4. Remove the meat from the pan and set it aside.
  5. 5. Coat the entire roast beef evenly with mustard.
  6. 6. Grind coriander seeds and pepper finely in a mortar.
  7. 7. Finely chop the thyme and mix it with the ground spice and about one teaspoon of salt.
  8. 8. Rub the meat all over with this spice mixture.
  9. 9. Place the meat on a wire rack. Put a drip pan underneath to catch rising fat drops.
  10. 10. Slide the rack into the preheated oven.
  11. 11. Roast the meat for about 40 to 50 minutes. The time depends on the thickness and desired doneness.
  12. 12. Check the core temperature. For a pink center, the thermometer should read about 55 degrees Celsius.
  13. 13. Remove the meat from the oven.
  14. 14. Wrap the meat briefly in aluminum foil and let it rest.
  15. 15. Pour the broth into the pan you seared the meat in to deglaze and lift the browned bits (fond).
  16. 16. Bring the sauce to a brief boil.
  17. 17. Remove the pan from the heat.
  18. 18. Stir the crème fraîche and some mustard into the sauce.
  19. 19. Season the sauce to taste with salt and pepper.
  20. 20. Slice the roast beef.
  21. 21. Serve the meat slices together with the warm sauce.
