🍽️ Juicy Roast Beef with Green Asparagus

Ingredients
- 600 g well-aged roast beef
- 1 tbsp clarified butter
- salt
- pepper (from the mill)
- 600 g small tomatoes
- 2 tsp chopped thyme leaves
- 800 g green asparagus
- 3 tbsp olive oil
Instructions
- 1. Preheat the oven to 80 degrees Celsius.
- 2. Heat clarified butter in a heatproof pan.
- 3. Sear the roast beef on all sides.
- 4. Wrap the meat tightly in aluminum foil.
- 5. Place the meat in the oven for 1.5 to 2 hours.
- 6. Remove the meat from the oven.
- 7. Season the meat with salt and pepper.
- 8. Let the meat rest for 5 minutes.
- 9. Wash the tomatoes and pat them dry.
- 10. Cut the tomatoes in half.
- 11. Sear the tomato halves briefly in hot oil.
- 12. Add the asparagus to the pan.
- 13. Heat the asparagus briefly.
- 14. Season the vegetables with thyme, salt, and pepper.
- 15. Slice the roast beef.
- 16. Serve the meat with the tomatoes and asparagus.
