🍽️ Juicy Roast Beef with Mashed Potatoes and Vegetables

Ingredients
- 1 kg Roast Beef (trimmed for kitchen use and tied in shape with kitchen twine)
- Salt
- 1 tsp Cumin
- Pepper (from the mill)
- 2 tbsp Vegetable oil
- 100 ml dry red wine
- 400 ml Meat broth
- 800 g floury-cooking potatoes
- 200 ml Milk
- 5 tbsp Butter
- Nutmeg (from the mill)
- 600 g green beans
- 4 Cherry tomatoes
Instructions
- 1. Preheat the oven to 140 degrees Celsius. Set the heating function to top and bottom heat.
- 2. Rinse the roast beef briefly and pat it dry with kitchen paper.
- 3. Rub the meat all over with salt, cumin, and pepper.
- 4. Sear the meat in batches on all sides in hot oil until browned.
- 5. Remove the meat from the pan and place it on a baking sheet.
- 6. Cook the meat in the oven for about 50 minutes.
- 7. Turn the meat about every 10 minutes during the cooking time.
- 8. Deglaze the pan drippings with red wine.
- 9. Add the broth and let the sauce simmer for about 10 minutes.
- 10. Season the sauce with salt and pepper and keep it warm.
- 11. Peel the potatoes and wash them.
- 12. Cut the potatoes into coarse cubes.
- 13. Boil the potato cubes in salted water for about 20 minutes until soft.
- 14. Drain the cooking water.
- 15. Press the potatoes through a potato ricer into a pot.
- 16. Heat the milk together with the butter.
- 17. Stir the hot milk-butter mixture into the potatoes.
- 18. Season the mash with salt and nutmeg.
- 19. Wash the beans and trim the ends.
- 20. Blanch the beans in salted water for about 8 minutes until al dente. (Blanchieren means to briefly cook in boiling water).
- 21. Toss the beans in the remaining butter in a pan.
- 22. Add the washed cherry tomatoes and toss everything for about 2 minutes.
- 23. Season the vegetables with salt and pepper.
- 24. Remove the roast beef from the oven.
- 25. Remove the kitchen twine from the meat.
- 26. Let the meat rest briefly.
- 27. Slice the meat.
- 28. Serve the roast beef with the sauce, mashed potatoes, and beans.
