  1. 1. Preheat the oven to 140 degrees Celsius. Set the heating function to top and bottom heat.
  2. 2. Rinse the roast beef briefly and pat it dry with kitchen paper.
  3. 3. Rub the meat all over with salt, cumin, and pepper.
  4. 4. Sear the meat in batches on all sides in hot oil until browned.
  5. 5. Remove the meat from the pan and place it on a baking sheet.
  6. 6. Cook the meat in the oven for about 50 minutes.
  7. 7. Turn the meat about every 10 minutes during the cooking time.
  8. 8. Deglaze the pan drippings with red wine.
  9. 9. Add the broth and let the sauce simmer for about 10 minutes.
  10. 10. Season the sauce with salt and pepper and keep it warm.
  11. 11. Peel the potatoes and wash them.
  12. 12. Cut the potatoes into coarse cubes.
  13. 13. Boil the potato cubes in salted water for about 20 minutes until soft.
  14. 14. Drain the cooking water.
  15. 15. Press the potatoes through a potato ricer into a pot.
  16. 16. Heat the milk together with the butter.
  17. 17. Stir the hot milk-butter mixture into the potatoes.
  18. 18. Season the mash with salt and nutmeg.
  19. 19. Wash the beans and trim the ends.
  20. 20. Blanch the beans in salted water for about 8 minutes until al dente. (Blanchieren means to briefly cook in boiling water).
  21. 21. Toss the beans in the remaining butter in a pan.
  22. 22. Add the washed cherry tomatoes and toss everything for about 2 minutes.
  23. 23. Season the vegetables with salt and pepper.
  24. 24. Remove the roast beef from the oven.
  25. 25. Remove the kitchen twine from the meat.
  26. 26. Let the meat rest briefly.
  27. 27. Slice the meat.
  28. 28. Serve the roast beef with the sauce, mashed potatoes, and beans.
