  1. 1. Rinse the meat under running water.
  2. 2. Pat the meat completely dry with kitchen paper.
  3. 3. Remove visible fat edges or sinew from the meat.
  4. 4. Season the meat generously with salt and pepper.
  5. 5. Heat oil in a large pan over high heat.
  6. 6. Sear the meat on all sides until it has a brown crust.
  7. 7. Remove the meat from the pan and let it cool.
  8. 8. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  9. 9. Wash the fresh herbs under cold water.
  10. 10. Shake the herbs dry.
  11. 11. Strip the leaves or needles from the stems.
  12. 12. Finely chop the herbs.
  13. 13. Whisk the egg white lightly until it is foamy.
  14. 14. Mix the egg white with the chopped herbs and salt.
  15. 15. Line a baking tray with baking paper.
  16. 16. Spread half of the salt mixture on the baking tray.
  17. 17. Place the meat on the salt mixture.
  18. 18. Encase the meat completely with the remaining salt mixture.
  19. 19. Press the salt crust firmly against the meat.
  20. 20. Bake the meat in the preheated oven for about 30 minutes.
  21. 21. Remove the meat from the oven.
  22. 22. Carefully break open the salt crust.
  23. 23. Remove the salt crust completely from the meat.
  24. 24. Slice the meat.
  25. 25. Serve the meat slices.
  26. 26. Garnish the dish with fresh herbs if desired.
