🍽️ Roast beef baked in a salt crust

Ingredients
- 800 g beef fillet (kitchen-ready, middle piece)
- salt
- pepper (from the mill)
- 2 tbsp vegetable oil
- 1 bunch lemon thyme
- 3 sprigs rosemary
- 3 egg whites
- 1.6 kg coarse sea salt
Instructions
- 1. Rinse the meat under running water.
- 2. Pat the meat completely dry with kitchen paper.
- 3. Remove visible fat edges or sinew from the meat.
- 4. Season the meat generously with salt and pepper.
- 5. Heat oil in a large pan over high heat.
- 6. Sear the meat on all sides until it has a brown crust.
- 7. Remove the meat from the pan and let it cool.
- 8. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 9. Wash the fresh herbs under cold water.
- 10. Shake the herbs dry.
- 11. Strip the leaves or needles from the stems.
- 12. Finely chop the herbs.
- 13. Whisk the egg white lightly until it is foamy.
- 14. Mix the egg white with the chopped herbs and salt.
- 15. Line a baking tray with baking paper.
- 16. Spread half of the salt mixture on the baking tray.
- 17. Place the meat on the salt mixture.
- 18. Encase the meat completely with the remaining salt mixture.
- 19. Press the salt crust firmly against the meat.
- 20. Bake the meat in the preheated oven for about 30 minutes.
- 21. Remove the meat from the oven.
- 22. Carefully break open the salt crust.
- 23. Remove the salt crust completely from the meat.
- 24. Slice the meat.
- 25. Serve the meat slices.
- 26. Garnish the dish with fresh herbs if desired.
