🍽️ Roastbeef on Sweet Potato Slices

Ingredients
- 400 g sweet potatoes
- salt
- pepper (from the mill)
- 4 sprigs thyme
- 2 tbsp olive oil
- 2 tbsp mayonnaise
- 2 tbsp sour cream horseradish
- 1 tbsp grainy mustard
- 12 slices roast beef
- 2 tsp pink peppercorns
- chive rolls
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Set the function to top and bottom heat.
- 2. Wash the sweet potatoes thoroughly. Cut off the ends. Slice the potatoes into approximately 1 centimeter thick rounds.
- 3. Line a baking tray with baking paper. Arrange the potato slices on it.
- 4. Season the potatoes with salt and pepper. Pluck thyme leaves from the stems and sprinkle them over the potatoes.
- 5. Drizzle the oil over the potatoes. Bake them in the oven for about 20 minutes until golden brown.
- 6. Mix the mayonnaise with the cream horseradish and the mustard in a bowl.
- 7. Season the sauce with salt and pepper to taste.
- 8. Take the potatoes out of the oven. Place them on a serving plate.
- 9. Fold each slice of roast beef neatly. Place the meat on the potato slices.
- 10. Add a dollop of the horseradish cream to the meat. Garnish with pink peppercorns and chives. Serve the dish.
