  1. 1. Preheat the oven to 200 degrees Celsius. Set the function to top and bottom heat.
  2. 2. Wash the sweet potatoes thoroughly. Cut off the ends. Slice the potatoes into approximately 1 centimeter thick rounds.
  3. 3. Line a baking tray with baking paper. Arrange the potato slices on it.
  4. 4. Season the potatoes with salt and pepper. Pluck thyme leaves from the stems and sprinkle them over the potatoes.
  5. 5. Drizzle the oil over the potatoes. Bake them in the oven for about 20 minutes until golden brown.
  6. 6. Mix the mayonnaise with the cream horseradish and the mustard in a bowl.
  7. 7. Season the sauce with salt and pepper to taste.
  8. 8. Take the potatoes out of the oven. Place them on a serving plate.
  9. 9. Fold each slice of roast beef neatly. Place the meat on the potato slices.
  10. 10. Add a dollop of the horseradish cream to the meat. Garnish with pink peppercorns and chives. Serve the dish.
