Ingredients
- 1 kg Roast Beef (with rind)
- Salt
- Pepper
- 4 Garlic cloves
- 1 Sprig Rosemary
- 1 Sprig Thyme
Instructions
- 1. Rinse the roast beef under cold running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut off the fat cap (the fatty skin side) from the meat.
- 4. Cut the separated fat cap into small cubes.
- 5. Rub the roast beef generously with salt and pepper all over.
- 6. Place the pork fat cubes into a roasting pan.
- 7. Render the fat cap over medium heat until the fat is liquid.
- 8. Increase the heat to high.
- 9. Sear the roast beef in the hot fat on all sides.
- 10. This process should take about 4 minutes.
- 11. Add the garlic and herbs to the roasting pan.
- 12. Place the roasting pan into a preheated oven.
- 13. Set the oven temperature to 180 °C.
- 14. Do not use fan-assisted heat (convection), as it is not recommended.
- 15. If using gas, set the stove to level 2 to 3.
- 16. Cook the roast beef in the oven for about 1 hour.
- 17. Remove the roasting pan from the oven after the cooking time.
- 18. Slice the roast beef into thin strips.
