  1. 1. Rinse the roast beef under cold running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut off the fat cap (the fatty skin side) from the meat.
  4. 4. Cut the separated fat cap into small cubes.
  5. 5. Rub the roast beef generously with salt and pepper all over.
  6. 6. Place the pork fat cubes into a roasting pan.
  7. 7. Render the fat cap over medium heat until the fat is liquid.
  8. 8. Increase the heat to high.
  9. 9. Sear the roast beef in the hot fat on all sides.
  10. 10. This process should take about 4 minutes.
  11. 11. Add the garlic and herbs to the roasting pan.
  12. 12. Place the roasting pan into a preheated oven.
  13. 13. Set the oven temperature to 180 °C.
  14. 14. Do not use fan-assisted heat (convection), as it is not recommended.
  15. 15. If using gas, set the stove to level 2 to 3.
  16. 16. Cook the roast beef in the oven for about 1 hour.
  17. 17. Remove the roasting pan from the oven after the cooking time.
  18. 18. Slice the roast beef into thin strips.
