  1. 1. Rinse the roast beef under cold running water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut off the fat rind from the meat.
  4. 4. Cut the separated fat rind into small cubes.
  5. 5. Rub the roast beef generously with salt and pepper all over.
  6. 6. Place the pork rind cubes into a hot casserole dish.
  7. 7. Render the fat slowly over medium heat.
  8. 8. Sear the roast beef in the hot fat on all sides.
  9. 9. Let it sear for about 4 minutes over high heat.
  10. 10. Add the garlic and herbs to the casserole dish.
  11. 11. Preheat the oven to 180 °C (conventional heat).
  12. 12. Place the casserole dish with the meat into the preheated oven.
  13. 13. Cook the roast beef for about 1 hour.
  14. 14. Remove the casserole dish from the oven afterwards.
  15. 15. Slice the roast beef into thin strips.
