🍽️ Quick Risotto with Asparagus and Smoked Salmon

Ingredients
- 1 package Riso Gallo Risotto Pronto with Asparagus (alternatively: Pronto Saffron)
- 50 g Smoked Salmon
- green Asparagus
- 5 g Butter
- 3 tbsp grated Parmesan
- 1 glass Vodka
Instructions
- 1. Cut the smoked salmon into small cubes and fry them in a pan with a little butter. Deglaze with vodka and stir until the alcohol has evaporated. Keep the mixture warm.
- 2. Halve the asparagus spears and blanch them briefly in boiling water.
- 3. Add one pack of Risotto Pronto Asparagus to a pan with 450 milliliters of water. Heat it on the stove and let it simmer for about 12 minutes once the water starts bubbling; stir occasionally until all the water has been absorbed.
- 4. Add the salmon one minute before the end of the cooking time and mix everything with a knob of butter and the Parmesan. Garnish with the asparagus spears and serve the dish hot.
