🍽️ South African Rice and Peas Casserole

Ingredients
- 100 g streaky bacon
- 2 tbsp chopped parsley
- 1 small onion
- 3 tbsp butter
- 1 l meat broth (instant)
- 250 g arborio rice
- salt
- pepper (from the mill)
- 200 g frozen peas
- 50 g grated parmesan
- parsley (for garnish)
Instructions
- 1. Cut the bacon into thin strips or small cubes.
- 2. Peel the onion and dice it finely.
- 3. Melt one tablespoon of butter in a pan.
- 4. Fry the bacon in the butter until crispy.
- 5. Add the onions and sauté them until translucent.
- 6. Stir the washed rice into the pan.
- 7. Pour the meat broth in slowly and in small amounts.
- 8. Wait until the liquid is almost fully absorbed before adding the next amount.
- 9. Let the rice cook for about 30 minutes.
- 10. Add the thawed peas during the last 5 minutes of cooking time.
- 11. Season the dish finally with salt and pepper.
- 12. Finish it off with a little butter and grated Parmesan.
- 13. Serve the casserole garnished with fresh parsley.
