🍽️ Spiced Ribs with Jam Glaze

Ingredients
- 1.2 kg Spareribs
- 1 Onion
- 4 tbsp Sugar
- 80 ml Apple Cider Vinegar
- 150 ml dry White Wine
- 1 Star Anise
- 1 Bay Leaf
- 1 tsp black Peppercorns
- 1 tsp Mustard Seeds
- 80 g Orange Marmalade
- Soy Sauce
- 1 tbsp Ketchup
- 1 tbsp Chili Sauce
- 1 tbsp Sesame Oil
- Salt
- Thai Basil
- Lime Wedge
Instructions
- 1. Rinse the ribs under running water.
- 2. Pat the meat pieces completely dry with a kitchen towel.
- 3. Divide the ribs into smaller portions by cutting them approximately every four bones.
- 4. Peel the onions.
- 5. Dice the onions into coarse chunks.
- 6. Put the sugar into a large pot.
- 7. Let the sugar caramelize until it turns light brown.
- 8. Deglaze the caramel with a splash of vinegar.
- 9. Simmer the mixture briefly until the sugar has completely dissolved.
- 10. Pour the white wine into the pot.
- 11. Add the remaining apple cider vinegar.
- 12. Pour 1 liter of water into the liquid.
- 13. Add the anise seeds to the pot.
- 14. Add the bay leaves.
- 15. Add the peppercorns to the marinade.
- 16. Add the mustard seeds.
- 17. Add the diced onions to the pot.
- 18. Place the ribs into the liquid.
- 19. Let the ribs simmer for about 40 minutes over low heat.
- 20. Put the orange marmalade into a small pot.
- 21. Add 2 tablespoons of water to the marmalade.
- 22. Stir the mixture until smooth and free of lumps.
- 23. Simmer the marmalade mixture briefly.
- 24. Strain the liquid through a fine sieve to smooth it out.
- 25. Mix the strained marmalade with ketchup.
- 26. Add the chili sauce.
- 27. Add some oil to the sauce.
- 28. Season the sauce to taste with soy sauce.
- 29. Remove the ribs from the cooking broth.
- 30. Let the meat pieces cool down completely.
- 31. Brush the cooled ribs with the prepared marinade.
- 32. Cover the ribs.
- 33. Let the ribs marinate overnight.
- 34. Preheat the oven to 200 degrees Celsius.
- 35. Finish baking the ribs for about 30 minutes.
- 36. Garnish the finished ribs with Thai basil as desired.
- 37. Add lime wedges as decoration.
- 38. Serve the ribs hot.
