  2. 2. Pat the meat pieces completely dry with a kitchen towel.
  3. 3. Divide the ribs into smaller portions by cutting them approximately every four bones.
  4. 4. Peel the onions.
  5. 5. Dice the onions into coarse chunks.
  6. 6. Put the sugar into a large pot.
  7. 7. Let the sugar caramelize until it turns light brown.
  8. 8. Deglaze the caramel with a splash of vinegar.
  9. 9. Simmer the mixture briefly until the sugar has completely dissolved.
  10. 10. Pour the white wine into the pot.
  11. 11. Add the remaining apple cider vinegar.
  12. 12. Pour 1 liter of water into the liquid.
  13. 13. Add the anise seeds to the pot.
  14. 14. Add the bay leaves.
  15. 15. Add the peppercorns to the marinade.
  16. 16. Add the mustard seeds.
  17. 17. Add the diced onions to the pot.
  18. 18. Place the ribs into the liquid.
  19. 19. Let the ribs simmer for about 40 minutes over low heat.
  20. 20. Put the orange marmalade into a small pot.
  21. 21. Add 2 tablespoons of water to the marmalade.
  22. 22. Stir the mixture until smooth and free of lumps.
  23. 23. Simmer the marmalade mixture briefly.
  24. 24. Strain the liquid through a fine sieve to smooth it out.
  25. 25. Mix the strained marmalade with ketchup.
  26. 26. Add the chili sauce.
  27. 27. Add some oil to the sauce.
  28. 28. Season the sauce to taste with soy sauce.
  29. 29. Remove the ribs from the cooking broth.
  30. 30. Let the meat pieces cool down completely.
  31. 31. Brush the cooled ribs with the prepared marinade.
  32. 32. Cover the ribs.
  33. 33. Let the ribs marinate overnight.
  34. 34. Preheat the oven to 200 degrees Celsius.
  35. 35. Finish baking the ribs for about 30 minutes.
  36. 36. Garnish the finished ribs with Thai basil as desired.
  37. 37. Add lime wedges as decoration.
  38. 38. Serve the ribs hot.
