  5. 5. Peel the carrot.

  7. 7. Clean the celery.
  8. 8. Cut the vegetables into coarse pieces.
  9. 9. Place the meat in a large pot.
  10. 10. Pour cold water over the meat.
  11. 11. Bring the liquid to a boil.
  12. 12. Skim off the rising foam.
  13. 13. Reduce the heat.
  14. 14. Simmer the broth gently for about 2.5 to 3 hours.
  15. 15. Make sure the broth stays just below the boiling point.
  16. 16. Add some water if necessary.
  17. 17. Ensure that the meat and bones are always covered.
  18. 18. Add the prepared vegetables after about 1 hour.
  19. 19. Salt the broth after about 1.5 hours.
  20. 20. Add the peppercorns.
  21. 21. Add the parsley.
  22. 22. Lift the meat, bones, and vegetables out of the broth.
  23. 23. Place a cloth in a sieve.
  24. 24. Strain the broth through the lined sieve.
