🍽️ Make homemade beef broth

Ingredients
- 1 onion
- 2 carrots
- 0.5 stalk leek
- 0.5 celeriac
- 500 g soup meat (e.g. beef brisket)
- 600 g beef marrow bones
- 1 tsp salt
- 1 tsp peppercorns
- 3 sprigs parsley
Instructions
- 1. Cut the onion in half.
- 2. Darkly brown the cut surfaces of the onion in a non-stick pan without fat.
- 3. Remove the onions from the pan.
- 4. Let the onions cool down.
- 5. Peel the carrot.
- 6. Clean the leek.
- 7. Clean the celery.
- 8. Cut the vegetables into coarse pieces.
- 9. Place the meat in a large pot.
- 10. Pour cold water over the meat.
- 11. Bring the liquid to a boil.
- 12. Skim off the rising foam.
- 13. Reduce the heat.
- 14. Simmer the broth gently for about 2.5 to 3 hours.
- 15. Make sure the broth stays just below the boiling point.
- 16. Add some water if necessary.
- 17. Ensure that the meat and bones are always covered.
- 18. Add the prepared vegetables after about 1 hour.
- 19. Salt the broth after about 1.5 hours.
- 20. Add the peppercorns.
- 21. Add the parsley.
- 22. Lift the meat, bones, and vegetables out of the broth.
- 23. Place a cloth in a sieve.
- 24. Strain the broth through the lined sieve.
