🍝 Hearty Beef Soup with Noodles

Ingredients
- 125 g Carrots
- 50 g Parsley root
- 1 small Leek stalk (100 g)
- 1 Onion
- 125 g Sirloin steak
- 2 tbsp Rapeseed oil
- Salt
- Pepper (from the mill)
- 50 g Whole grain noodles (Spiral noodles)
- 600 ml Vegetable broth
- 50 g Frozen peas
- 1 Organic lemon
- 1 Clove of garlic
- 4 sprigs flat-leaf parsley
Instructions
- 1. Peel the carrots and the parsnips. Slice them into thick rounds.
- 2. Clean the leek. Slit it lengthwise and wash it thoroughly under running water. Then slice it into rings.
- 3. Peel the onion. Dice it into fine cubes.
- 4. Pat the meat dry with kitchen paper. Cut it into bite-sized cubes.
- 5. Heat the oil in a large pot.
- 6. Fry the meat cubes on all sides until they are brown.
- 7. Season the meat with salt and pepper.
- 8. Remove the meat from the pot and set it aside.
- 9. Add the onions, carrots, parsnips, and leek to the frying oil.
- 10. Sauté the vegetables until soft, without browning them.
- 11. Deglaze the vegetables with the beef broth.
- 12. Season the soup with salt and pepper.
- 13. Let the soup simmer for about 10 minutes.
- 14. Add the peas after 7 minutes of cooking time.
- 15. Cook the peas until they are tender.
- 16. Wash the lemon under hot water.
- 17. Grate the fine zest (the yellow part) from half of the lemon.
- 18. Peel the garlic.
- 19. Mince the garlic very finely.
- 20. Wash the parsley.
- 21. Shake the parsley dry.
- 22. Chop the parsley.
- 23. Mix the lemon zest, garlic, and parsley in a small bowl.
- 24. Cook the noodles in plenty of boiling salted water according to package instructions until al dente.
- 25. Drain the noodles.
- 26. Rinse the noodles with cold water to stop the cooking process.
- 27. Let the noodles drain well.
- 28. Add the prepared meat and the noodles to the soup.
- 29. Heat the soup again briefly.
- 30. Finally, adjust the seasoning of the soup with salt and pepper.
- 31. Serve the soup on plates.
- 32. Sprinkle the soup with the garlic-parsley mixture.
