  1. 1. Peel the carrots and the parsnips. Slice them into thick rounds.
  2. 2. Clean the leek. Slit it lengthwise and wash it thoroughly under running water. Then slice it into rings.
  3. 3. Peel the onion. Dice it into fine cubes.
  4. 4. Pat the meat dry with kitchen paper. Cut it into bite-sized cubes.
  5. 5. Heat the oil in a large pot.
  6. 6. Fry the meat cubes on all sides until they are brown.
  7. 7. Season the meat with salt and pepper.
  8. 8. Remove the meat from the pot and set it aside.
  9. 9. Add the onions, carrots, parsnips, and leek to the frying oil.
  10. 10. Sauté the vegetables until soft, without browning them.
  11. 11. Deglaze the vegetables with the beef broth.
  12. 12. Season the soup with salt and pepper.
  13. 13. Let the soup simmer for about 10 minutes.
  14. 14. Add the peas after 7 minutes of cooking time.
  15. 15. Cook the peas until they are tender.
  16. 16. Wash the lemon under hot water.
  17. 17. Grate the fine zest (the yellow part) from half of the lemon.
  18. 18. Peel the garlic.
  19. 19. Mince the garlic very finely.
  20. 20. Wash the parsley.
  21. 21. Shake the parsley dry.
  22. 22. Chop the parsley.
  23. 23. Mix the lemon zest, garlic, and parsley in a small bowl.
  24. 24. Cook the noodles in plenty of boiling salted water according to package instructions until al dente.
  25. 25. Drain the noodles.
  26. 26. Rinse the noodles with cold water to stop the cooking process.
  27. 27. Let the noodles drain well.
  28. 28. Add the prepared meat and the noodles to the soup.
  29. 29. Heat the soup again briefly.
  30. 30. Finally, adjust the seasoning of the soup with salt and pepper.
  31. 31. Serve the soup on plates.
  32. 32. Sprinkle the soup with the garlic-parsley mixture.
