🍽️ Spicy Beef Skewers with Fresh Cucumber and Apple Salad

Ingredients
- 600 g beef sirloin steak
- 3 tbsp sesame oil
- 2 tbsp soy sauce
- pepper
- 1 pinch chili powder
- 2 tsp honey
- 400 g small salad cucumber (1 small salad cucumber)
- 1 red apple
- 3 spring onions
- 2 sprigs mint
- 45 g roasted nut kernels (3 tbsp; e.g.: hazelnuts, almonds, peanuts)
- 1 lime (juice)
- salt
- 3 tbsp olive oil
- 25 g white sesame seeds (2 tbsp)
Instructions
- 1. Rinse the beef under cold water and pat it completely dry with a kitchen towel.
- 2. Cut the meat into thin, long strips by slicing it lengthwise.
- 3. Thread the meat strips onto eight prepared wooden skewers.
- 4. Whisk two tablespoons of sesame oil with soy sauce, pepper, chili powder, and one teaspoon of honey in a small bowl.
- 5. Turn the skewers in the marinade so they are coated all over.
- 6. Let the skewers marinate for ten minutes to absorb the flavors.
- 7. Peel the cucumber and cut it lengthwise into four halves.
- 8. Cut the cucumber halves into bite-sized pieces.
- 9. Wash the apple, cut it into quarters, and remove the core.
- 10. Dice the apple flesh into small, even pieces.
- 11. Wash the spring onions and slice them diagonally into thin rings.
- 12. Wash the mint and shake off the excess water.
- 13. Carefully pluck the mint leaves from the stems.
- 14. Roughly chop the nuts with a knife.
- 15. Mix the lime juice with salt, pepper, the remaining honey, and olive oil to create a dressing.
- 16. Place the prepared cucumber, apples, spring onions, mint, and nuts into a large bowl.
- 17. Pour the dressing over the salad ingredients and mix everything thoroughly.
- 18. Heat the remaining sesame oil in a grill pan over medium heat.
- 19. Let the excess marinade drip off the skewers.
- 20. Fry the skewers in batches for two to three minutes on each side until cooked through.
- 21. Drizzle the remaining marinade over the finished skewers.
- 22. Finally, sprinkle the skewers with sesame seeds.
- 23. Serve the warm skewers together with the cold cucumber salad.
