🍽️ Thai-style beef salad with mango and fresh vegetables

Ingredients
- 4 beef tenderloin steaks (approx. 140 g each)
- 1 tbsp vegetable oil
- salt
- 200 g rice noodles
- 1 mango
- 2 chili peppers
- 1 carrot
- 1 zucchini
- 100 g sprouts
- 100 g Chinese cabbage
- 1 garlic clove
- 1 tsp freshly grated ginger
- 2 tbsp rice vinegar
- 2 tbsp light soy sauce
- 1 tsp brown sugar
- 3 tbsp sesame oil
- 1 tbsp freshly chopped coriander leaves
Instructions
- 1. Rinse the beef steaks under cold water.
- 2. Pat the steaks completely dry with a kitchen towel.
- 3. Season the steaks on both sides with salt.
- 4. Heat vegetable oil in a large frying pan over high heat.
- 5. Fry the steaks in the hot oil for 2 to 3 minutes per side.
- 6. Remove the steaks from the pan and let them rest briefly.
- 7. Cook the noodles according to the instructions on the package.
- 8. Rinse the cooked noodles with cold water to stop the cooking process.
- 9. Let the noodles drain well in a colander.
- 10. Peel the mango and cut the flesh into strips away from the pit.
- 11. Wash the chili peppers under running water.
- 12. Remove the stems and the inside of the chili peppers.
- 13. Finely chop the chili peppers.
- 14. Peel the carrot.
- 15. Grate the carrot finely.
- 16. Wash the zucchini under running water.
- 17. Remove the hard ends of the zucchini.
- 18. Cut the zucchini into very thin strips.
- 19. Wash the sprouts under running water.
- 20. Let the sprouts drain well in a colander.
- 21. Wash the Chinese cabbage under running water.
- 22. Remove the hard stems from the Chinese cabbage.
- 23. Cut the Chinese cabbage into very thin strips.
- 24. Peel the garlic cloves.
- 25. Finely chop the garlic.
- 26. Mix the chopped garlic with the ginger.
- 27. Add the rice vinegar to the mixture.
- 28. Add the soy sauce to the mixture.
- 29. Add the sugar to the mixture.
- 30. Add the sesame oil to the mixture.
- 31. Mix all ingredients for the sauce well together.
- 32. Add the mango pieces to the sauce.
- 33. Add the chopped chili to the sauce.
- 34. Add the grated carrots to the sauce.
- 35. Add the zucchini strips to the sauce.
- 36. Add the sprouts to the sauce.
- 37. Add the Chinese cabbage strips to the sauce.
