  3. 3. Cut the meat into twelve as thin slices as possible.
  4. 4. Lightly flatten the meat slices with a meat mallet or a rolling pin.
  5. 5. Grate the cheese finely.
  6. 6. Distribute the grated cheese evenly over the meat slices.
  7. 7. Roll the meat slices tightly into small rolls.
  8. 8. Secure the rolls with toothpicks if necessary to prevent them from opening.
  9. 9. Preheat the oven to 200 degrees Celsius top and bottom heat.
  10. 10. Heat the lard in a large pan.
  11. 11. Fry the meat rolls in the hot lard brown on all sides.
  12. 12. Place the browned rolls on a baking sheet lined with baking paper.
  13. 13. Bake the meat rolls in the preheated oven for about 10 minutes.
  14. 14. Peel the onions during the baking time.
  15. 15. Halve the peeled onions.
  16. 16. Heat the oil in a separate pan.
  17. 17. Sauté the onion halves in the hot oil over medium heat.
  18. 18. Drizzle the onions with the vinegar.
  19. 19. Season the onions with sugar and salt.
  20. 20. Stew the onions until soft for about 10 minutes.

  24. 24. Distribute the meat rolls on the plates.
  25. 25. Insert one rosemary sprig into the onions.
  26. 26. Place the decorated onions on the meat.
  27. 27. Serve the dish immediately.
