🍽️ Smoked Cheese Beef Rolls

Ingredients
- 600 g beef tenderloin
- 100 g smoked Gouda
- 2 tbsp clarified butter
- salt
- pepper (from the mill)
- 4 small red onions
- 2 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 1 tsp sugar
- 12 sprigs rosemary
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the meat into twelve as thin slices as possible.
- 4. Lightly flatten the meat slices with a meat mallet or a rolling pin.
- 5. Grate the cheese finely.
- 6. Distribute the grated cheese evenly over the meat slices.
- 7. Roll the meat slices tightly into small rolls.
- 8. Secure the rolls with toothpicks if necessary to prevent them from opening.
- 9. Preheat the oven to 200 degrees Celsius top and bottom heat.
- 10. Heat the lard in a large pan.
- 11. Fry the meat rolls in the hot lard brown on all sides.
- 12. Place the browned rolls on a baking sheet lined with baking paper.
- 13. Bake the meat rolls in the preheated oven for about 10 minutes.
- 14. Peel the onions during the baking time.
- 15. Halve the peeled onions.
- 16. Heat the oil in a separate pan.
- 17. Sauté the onion halves in the hot oil over medium heat.
- 18. Drizzle the onions with the vinegar.
- 19. Season the onions with sugar and salt.
- 20. Stew the onions until soft for about 10 minutes.
- 21. Rinse the rosemary under running water.
- 22. Shake the rosemary dry.
- 23. Take the meat rolls out of the oven.
- 24. Distribute the meat rolls on the plates.
- 25. Insert one rosemary sprig into the onions.
- 26. Place the decorated onions on the meat.
- 27. Serve the dish immediately.
