  1. 1. Cut the beef into large cubes.
  2. 2. Peel the onions and garlic and dice them finely.
  3. 3. Peel the ginger and mince or grate it finely.
  4. 4. Remove the seeds from the chili if desired, and dice it finely.
  5. 5. Heat the ghee in a large pot.
  6. 6. Fry the meat in batches and set it aside.
  7. 7. Add the onions, garlic, and ginger to the remaining fat.
  8. 8. Sauté the vegetables for 5 minutes until lightly browned, stirring occasionally.
  9. 9. Add the curry powder and some chili.
  10. 10. Grind the cinnamon, cumin, and cloves finely in a mortar.
  11. 11. Add the ground spices and cook for about 1 minute.
  12. 12. Return the meat to the pot.
  13. 13. Serve the ragout with basmati rice and the remaining yogurt.
