🍽️ Indian-style Beef Ragout with Ginger

Ingredients
- 1 kg beef (lean, for stewing)
- 2 onions
- 2 garlic cloves
- 4 cm ginger
- 2 chili peppers
- 2 tbsp ghee
- 1 tbsp curry powder
- 2 tsp cumin
- 1 small piece cinnamon bark
- 1 clove
- 4 ripe tomatoes
- 0.5 bunch cilantro
- salt
- pepper
- 150 g yogurt
- rice (to serve)
Instructions
- 1. Cut the beef into large cubes.
- 2. Peel the onions and garlic and dice them finely.
- 3. Peel the ginger and mince or grate it finely.
- 4. Remove the seeds from the chili if desired, and dice it finely.
- 5. Heat the ghee in a large pot.
- 6. Fry the meat in batches and set it aside.
- 7. Add the onions, garlic, and ginger to the remaining fat.
- 8. Sauté the vegetables for 5 minutes until lightly browned, stirring occasionally.
- 9. Add the curry powder and some chili.
- 10. Grind the cinnamon, cumin, and cloves finely in a mortar.
- 11. Add the ground spices and cook for about 1 minute.
- 12. Return the meat to the pot.
- 13. Serve the ragout with basmati rice and the remaining yogurt.
