🍽️ Marinated Beef Stew

Ingredients
- 1 kg beef (leg or shoulder)
- 2 carrots
- 2 onions
- 4 garlic cloves
- 2 stalks celery
- 2 oranges
- 1 tsp juniper berries
- 1 tsp peppercorns
- 2 bay leaves
- 750 ml red wine
- 6 sprigs thyme
- 2 sprigs rosemary
- 1 sprig sage
- 4 tomatoes
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- cayenne pepper
- 1 tsp honey
Instructions
- 1. Cut the beef into bite-sized cubes.
- 2. Peel one carrot, one onion, one clove of garlic, and one stalk of celery, then chop them roughly.
- 3. Peel the zest thinly from one orange.
- 4. Mix the roughly chopped vegetables with the orange zest, juniper berries, peppercorns, bay leaves, and wine.
- 5. Set the meat aside.
- 6. Add the meat to the marinade, stir to combine, and cover the bowl.
- 7. Let the meat marinate in the refrigerator overnight.
- 8. Remove the meat from the marinade and pat it dry with a kitchen towel.
- 9. Strain the marinade through a sieve to remove the solid ingredients.
- 10. Wash and peel the remaining vegetables and the garlic.
- 11. Dice the prepared vegetables and garlic finely.
- 12. Wash the fresh herbs and chop them finely.
- 13. Peel the zest thinly from the second orange.
- 14. Squeeze both oranges and collect the juice.
- 15. Peel the tomatoes and cut them into cubes.
- 16. Heat oil in a pot.
- 17. Sear the meat in batches over high heat.
- 18. Remove the seared meat and set it aside.
- 19. Fry the diced vegetables, garlic, and herbs in the remaining oil for 3 to 5 minutes.
- 20. Deglaze the vegetables with the orange juice and the strained marinade.
- 21. Return the meat, orange zest, and tomato cubes to the pot.
- 22. Season the stew with salt, pepper, cayenne pepper, and honey.
- 23. Cover the pot and simmer the stew on low heat for about 3 hours.
- 24. Add a little liquid if necessary to prevent the stew from drying out.
- 25. Taste the stew and adjust the seasoning if needed.
- 26. Serve the stew hot, for example with baguette.
