  1. 1. Cut the beef into bite-sized cubes.
  2. 2. Peel one carrot, one onion, one clove of garlic, and one stalk of celery, then chop them roughly.
  3. 3. Peel the zest thinly from one orange.
  4. 4. Mix the roughly chopped vegetables with the orange zest, juniper berries, peppercorns, bay leaves, and wine.
  5. 5. Set the meat aside.
  6. 6. Add the meat to the marinade, stir to combine, and cover the bowl.
  7. 7. Let the meat marinate in the refrigerator overnight.
  8. 8. Remove the meat from the marinade and pat it dry with a kitchen towel.
  9. 9. Strain the marinade through a sieve to remove the solid ingredients.
  10. 10. Wash and peel the remaining vegetables and the garlic.
  11. 11. Dice the prepared vegetables and garlic finely.
  12. 12. Wash the fresh herbs and chop them finely.
  13. 13. Peel the zest thinly from the second orange.
  14. 14. Squeeze both oranges and collect the juice.
  15. 15. Peel the tomatoes and cut them into cubes.
  16. 16. Heat oil in a pot.
  17. 17. Sear the meat in batches over high heat.
  18. 18. Remove the seared meat and set it aside.
  19. 19. Fry the diced vegetables, garlic, and herbs in the remaining oil for 3 to 5 minutes.
  20. 20. Deglaze the vegetables with the orange juice and the strained marinade.
  21. 21. Return the meat, orange zest, and tomato cubes to the pot.
  22. 22. Season the stew with salt, pepper, cayenne pepper, and honey.
  23. 23. Cover the pot and simmer the stew on low heat for about 3 hours.
  24. 24. Add a little liquid if necessary to prevent the stew from drying out.
  25. 25. Taste the stew and adjust the seasoning if needed.
  26. 26. Serve the stew hot, for example with baguette.
