🥗 Colorful Salad with Beef, Tomatoes, and Green Beans

Ingredients
- 500 g green beans
- salt
- 150 g young spinach
- 400 g cherry tomatoes
- 500 g beef (e.g. hip or loin)
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 100 g sour cream
- 50 g yogurt
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 pinch sugar
Instructions
- 1. Wash the green beans and remove the tough ends.
- 2. Blanch the beans in salted water for about 8 minutes until tender-crisp.
- 3. Rinse the beans with cold water to stop the cooking and drain them well.
- 4. Wash the spinach and spin it dry.
- 5. Wash the tomatoes and cut them in half.
- 6. Rinse the meat briefly and pat it dry.
- 7. Cut the meat into strips.
- 8. Heat oil in a large non-stick pan.
- 9. Fry the meat strips on all sides for 1 to 2 minutes.
- 10. Season the meat with salt and pepper.
- 11. Mix the sour cream with the yogurt and mayonnaise.
- 12. Stir in the lemon juice and 2 to 3 tablespoons of water.
- 13. Season the sauce with sugar, salt, and pepper.
- 14. Arrange the beans, tomatoes, spinach, and meat strips on the plates.
- 15. Drizzle some of the sauce over the salad.
- 16. Serve the remaining sauce separately.
