🍝 Quick Beef Stir-fry with Noodles and Colorful Vegetables

Ingredients
- 300 g beef rump steak
- 5 tbsp soy sauce
- 1 tbsp lime juice
- 100 g red cabbage
- 1 onion
- 1 clove garlic
- 10 g ginger root
- 2 carrots
- 10 g bean sprouts (1 handful)
- 2 spring onions
- 2 tbsp peanut oil
- 1 sprig basil
- 100 g kohlrabi (1 small kohlrabi)
- 150 g udon noodles
- salt
- pepper
Instructions
- 1. Rinse the beef under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the beef into thin strips.
- 4. Mix the soy sauce with the lime juice.
- 5. Place the meat strips in the marinade for 15 minutes.
- 6. Prepare the red cabbage and wash it.
- 7. Shred the red cabbage into fine strips.
- 8. Peel the onion, garlic, and ginger.
- 9. Chop the onion, garlic, and ginger finely.
- 10. Peel the carrots.
- 11. Cut the carrots into short, thick sticks.
- 12. Rinse the bean sprouts.
- 13. Blanch the bean sprouts in salted water for 1 minute.
- 14. Remove the bean sprouts from the water.
- 15. Cool the bean sprouts immediately under cold water.
- 16. Let the bean sprouts drain.
- 17. Wash the spring onions.
- 18. Cut the spring onions diagonally into about 1 cm thick rings.
- 19. Heat 1 tablespoon of oil in a large pan or wok.
- 20. Fry the onions, carrots, and red cabbage for 4 minutes over medium heat.
- 21. Add the garlic and ginger.
- 22. Fry everything for another 2 minutes.
- 23. Add the bean sprouts and spring onions.
- 24. Fry everything for another 2 minutes.
- 25. Remove the crunchy vegetables from the pan.
- 26. Set the vegetables aside.
- 27. Wash the basil.
- 28. Shake the basil dry.
- 29. Pluck the basil leaves.
- 30. Peel the kohlrabi.
- 31. Cut the kohlrabi into sticks.
- 32. Cook the noodles in plenty of boiling salted water until al dente.
- 33. Drain the noodles in a colander.
- 34. Let the noodles drain well.
- 35. Heat the remaining oil in the pan.
- 36. Remove the meat from the marinade.
- 37. Let the meat drain briefly.
- 38. Catch the marinade liquid.
- 39. Fry the meat in the hot oil over high heat for 5 minutes until browned.
- 40. Add the vegetables and the marinade liquid.
- 41. Mix everything well.
- 42. Season the beef in the pan with salt and pepper.
- 43. Serve the noodles with the beef and vegetable mixture.
- 44. Sprinkle the basil over it.
- 45. Place the kohlrabi sticks alongside.
