🍽️ Grilled beef and shrimp skewers with fresh leaf salad

Ingredients
- 500 g beef fillet steak (e.g. sirloin or loin)
- 16 large shrimp (kitchen-ready, deveined and peeled except for the tail segment)
- 1 clove garlic
- 1 chili pepper
- 1 tbsp fresh chopped parsley
- 1 lime (juice)
- 50 ml olive oil
- salt
- 2 handfuls mixed leaf salad (e.g. watercress, young spinach, sorrel, arugula)
- 4 tbsp white balsamic vinegar
- 1 tsp honey
- 6 tbsp olive oil
- salt
Instructions
- 1. Rinse the beef and shrimp under cold water.
- 2. Pat the meat and shrimp dry with a kitchen towel.
- 3. Cut the beef into small, bite-sized cubes.
- 4. Peel the garlic cloves and chop them finely.
- 5. Wash the chili pepper and remove the seeds.
- 6. Finely chop the chili as well.
- 7. Mix the lime juice and oil in a bowl.
- 8. Add the chopped garlic, chili, and parsley to the marinade.
- 9. Stir the marinade well.
- 10. Add the beef and shrimp to the marinade.
- 11. Mix everything well so that everything is evenly coated.
- 12. Cover the bowl.
- 13. Let the ingredients marinate in the refrigerator for about 1 hour.
- 14. Take the meat and shrimp out of the marinade.
- 15. Thread the ingredients onto eight prepared wooden skewers.
- 16. Preheat the grill to high heat.
- 17. Place the skewers on the hot grill.
- 18. Grill the skewers for about 5 minutes.
- 19. Turn the skewers occasionally to ensure even cooking.
- 20. Brush the skewers occasionally with the remaining marinade.
- 21. Season the skewers with salt at the end.
- 22. Rinse the leaf salad under cold water.
- 23. Remove any tough stems or wilted greens.
- 24. Dry the salad well.
- 25. Tear the salad into smaller pieces if necessary.
- 26. Whisk the vinegar with the honey and the oil.
- 27. Season the dressing with salt.
- 28. Place the salad on the plates.
- 29. Place the grilled skewers alongside.
- 30. Serve the dish immediately.
