  1. 1. Heat some ghee in a casserole pot.
  2. 2. Cut the meat into 4 to 6 equal pieces.
  3. 3. Season the meat pieces generously all over.
  4. 4. Sear the meat in the hot fat on all sides.
  5. 5. Peel the onions and cut them into wedges.
  6. 6. Add the onion wedges to the meat and let them cook briefly.
  7. 7. Slice the mushrooms thinly.
  8. 8. Fry the mushrooms briefly as well.
  9. 9. Deglaze with red wine once everything has a good color.
  10. 10. Pour in some beef broth.
  11. 11. Add the bay leaves to the pot.
  12. 12. Simmer the meat over moderate heat for 45 to 60 minutes.
  13. 13. Add more broth gradually if needed.
  14. 14. Taste the sauce again at the end of the cooking time.
  15. 15. Serve the meat with the onions and mushrooms.
