🍽️ Quick Beef and Asparagus Wok Dish

Ingredients
- 400 g beef fillet
- 1 tsp cornstarch
- 1 tsp soy sauce
- 1 tsp sherry
- 0.25 tsp chili powder
- 400 asparagus
- 2 tbsp oil
- 2 tbsp soy sauce
- 2 tbsp sherry
- 3 tbsp chicken broth
- 1 tsp cornstarch
- pepper
- 0.5 tsp sugar
Instructions
- 1. Cut the beef into thin strips. Always cut across the grain of the meat.
- 2. Dust the beef strips with starch.
- 3. Pour the soy sauce and sherry over the beef.
- 4. Mix the chili peppers into the beef.
- 5. Let the beef marinate in the refrigerator for 30 minutes.
- 6. Wash the asparagus thoroughly.
- 7. Peel the lower end of the asparagus.
- 8. Cut off the tough ends of the asparagus.
- 9. Cut the asparagus into small pieces.
- 10. Cook the asparagus in boiling salted water for 10 to 12 minutes until tender-crisp.
- 11. Drain the asparagus.
- 12. Let the asparagus drain well.
- 13. Heat a large wok.
- 14. Add the oil to the hot wok.
- 15. Sear the beef quickly on all sides.
- 16. Whisk the remaining ingredients in a small bowl.
- 17. Pour the sauce over the beef.
- 18. Bring the sauce to a boil once.
- 19. Add the asparagus.
- 20. Stir everything once over high heat.
- 21. Plate the dish.
- 22. Garnish the dish with fine vegetable strips as desired.
- 23. Serve the dish hot.
