🍽️ Hearty Beef and Vegetable Stew

Ingredients
- 2 onions
- 300 g beef
- 3 potatoes
- 250 g green beans
- 1 carrot
- 100 g celery
- 1 small parsley root
- 2 tbsp chopped parsley
- 2 tbsp rapeseed oil
- 1.5 l vegetable broth
- Nutmeg
- 1 bay leaf
- 1 clove
Instructions
- 1. Peel the onions and slice them into rings.
- 2. Cut the beef into bite-sized cubes.
- 3. Wash the potatoes, peel them, and slice them.
- 4. Wash the beans and trim the ends.
- 5. Cut the beans into pieces about 3 centimeters long.
- 6. Wash the carrot and slice it.
- 7. Peel the celery and cut it into cubes.
- 8. Heat the oil in a large pot.
- 9. Sauté the onion rings until translucent.
- 10. Remove about half of the onions and set them aside.
- 11. Roughly chop half of the parsley.
- 12. Add the chopped parsley to the remaining onions in the pot and sauté briefly.
- 13. Pour the vegetable broth into the pot.
- 14. Add the beef cubes.
- 15. Season the dish with nutmeg, a bay leaf, and cloves.
- 16. Cover the pot and let the meat simmer for about 30 minutes.
- 17. Add the potato slices to the meat.
- 18. Cook the dish for another 10 minutes.
- 19. Add the beans, carrot slices, celery cubes, and parsley root.
- 20. Cover the pot again and cook the vegetables for another 10 minutes until tender.
- 21. Add the remaining fresh parsley to the stew and stir it in.
- 22. Serve the stew in bowls or deep plates.
- 23. Garnish the dish with the fried onion rings set aside earlier.
