  1. 1. Peel the onions and slice them into rings.
  2. 2. Cut the beef into bite-sized cubes.
  3. 3. Wash the potatoes, peel them, and slice them.
  4. 4. Wash the beans and trim the ends.
  5. 5. Cut the beans into pieces about 3 centimeters long.
  6. 6. Wash the carrot and slice it.
  7. 7. Peel the celery and cut it into cubes.
  8. 8. Heat the oil in a large pot.
  9. 9. Sauté the onion rings until translucent.
  10. 10. Remove about half of the onions and set them aside.
  11. 11. Roughly chop half of the parsley.
  12. 12. Add the chopped parsley to the remaining onions in the pot and sauté briefly.
  13. 13. Pour the vegetable broth into the pot.
  14. 14. Add the beef cubes.
  15. 15. Season the dish with nutmeg, a bay leaf, and cloves.
  16. 16. Cover the pot and let the meat simmer for about 30 minutes.
  17. 17. Add the potato slices to the meat.
  18. 18. Cook the dish for another 10 minutes.
  19. 19. Add the beans, carrot slices, celery cubes, and parsley root.
  20. 20. Cover the pot again and cook the vegetables for another 10 minutes until tender.
  21. 21. Add the remaining fresh parsley to the stew and stir it in.
  22. 22. Serve the stew in bowls or deep plates.
  23. 23. Garnish the dish with the fried onion rings set aside earlier.
