🍽️ Juicy Beef Fajitas with Fresh Pepper Salad

Ingredients
- 6 ripe tomatoes
- 1 shallot
- 1 garlic clove
- 2 tbsp lime juice
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 0.5 red bell pepper
- 0.5 yellow bell pepper
- 0.5 green bell pepper
- 1 red onion
- 600 g beef fillet (kitchen-ready, trimmed)
- 2 tbsp vegetable oil
- chili powder
- 1 tbsp finely chopped parsley
- lime juice
- 8 tortilla wraps (approx. 17 cm diameter each)
- 8 leek strips (for tying)
Instructions
- 1. Wash the salsa peppers thoroughly.
- 2. Remove the stem bases and seeds from the peppers.
- 3. Cut the flesh of the peppers into small cubes.
- 4. Peel the shallot and the garlic.
- 5. Finely chop the shallot and garlic.
- 6. Mix the diced peppers with the chopped shallot-garlic mixture.
- 7. Add the tomatoes and parsley to the mixture.
- 8. Add the lime juice and oil.
- 9. Season the salad with salt and pepper and adjust to taste.
- 10. Wash the bell peppers.
- 11. Quarter the bell peppers.
- 12. Remove the seeds and white inner walls from the pepper quarters.
- 13. Cut the peppers into thin, narrow strips.
- 14. Peel the onions.
- 15. Halve the onions.
- 16. Cut the onions into narrow strips as well.
- 17. Wash the meat.
- 18. Pat the meat dry with a kitchen towel.
- 19. Cut the meat into thin strips.
- 20. Heat oil in a hot pan.
- 21. Sear the meat strips on all sides.
- 22. Season the meat with salt, pepper, and chili.
- 23. Remove the meat from the pan and set it aside.
- 24. Add the pepper and onion vegetables to the pan.
- 25. Sauté the vegetables while shaking the pan occasionally.
- 26. Return the seared meat to the pan.
- 27. Add the parsley.
- 28. Toss everything well to combine.
- 29. Season the mixture with lime juice and adjust to taste.
- 30. Adjust the seasoning of the mixture if necessary.
- 31. Warm the tortilla wraps slightly.
- 32. Spread the wraps with guacamole as desired.
- 33. Place some of the vegetable-beef mixture onto the wraps.
- 34. Roll up the fajitas.
- 35. Secure the fajitas with leek strips.
- 36. Arrange the fajitas on plates.
- 37. Serve the fajitas with the tomato salad.
