  1. 1. Cut the beef into thin strips. Whisk the fish sauce and soy sauce with the lime juice. Peel the garlic and press it into the liquid. Mix the beef with the marinade and let it marinate for 30 minutes.
  2. 2. Wash the leek and cut the white and light green parts into thin strips (julienne). Blanch the leek for 2 minutes in boiling salted water, drain it, and let it drip dry.
  3. 3. Remove the beef from the marinade and sear it in hot oil in the wok while stirring constantly. Take the beef out and serve it on top of the leek.
