🍽️ Thai-style Beef in Parchment Packets

Ingredients
- 4 beef tenderloin steaks (approx. 160 g each)
- salt
- pepper (from the mill)
- olive oil
- 1 shallot
- 2 garlic cloves
- 2 cm ginger
- 1 chili pepper
- 2 allspice berries
- 0.5 tsp peppercorns
- 3 sprigs Thai basil
- Thai basil (for garnish)
Instructions
- 1. Preheat the oven to 160 degrees Celsius fan-forced.
- 2. Rinse the steaks briefly and pat them dry with a kitchen towel.
- 3. Season the steaks with salt and pepper.
- 4. Heat 1-2 tablespoons of oil in a frying pan.
- 5. Sear the steaks on all sides.
- 6. Remove the steaks from the pan and set them aside.
- 7. Peel the shallot, garlic, and ginger.
- 8. Finely chop the shallot, garlic, and ginger.
- 9. Wash the chili pepper and remove the stem.
- 10. Chop the chili pepper finely.
- 11. Coarsely grind allspice berries and pepper in a mortar.
- 12. Mix the ground spice with the shallot, garlic, ginger, chili, and 1-2 tablespoons of oil.
- 13. Pluck the basil leaves from the stems.
- 14. Slice the basil leaves into thin strips.
- 15. Set the basil strips aside.
- 16. Mix the basil strips into the spice-oil mixture.
- 17. Season the spice mixture with salt.
- 18. Cut four pieces of parchment paper.
- 19. Brush the parchment paper pieces with oil.
- 20. Place one steak in the center of a parchment paper piece.
- 21. Spread the spice mixture evenly over the steak.
- 22. Fold the parchment paper over the steak.
- 23. Twist the open ends of the paper tightly.
- 24. Tie the packets securely with kitchen twine.
- 25. Place the parchment paper packets in the preheated oven.
- 26. Cook the steaks for about 15 minutes.
- 27. Pay attention to your desired doneness and adjust the time for thicker meat.
- 28. Open the packets shortly before serving.
- 29. Garnish the dish with fresh Thai basil.
