  1. 1. Rinse the beef tongue under running water and cut off any hard parts.
  2. 2. Wash the soup vegetables, clean them, and peel them if necessary.
  3. 3. Peel the onion and chop everything roughly.
  4. 4. Place the vegetables and the tongue in a pot.
  5. 5. Cover everything with water.
  6. 6. Simmer the tongue for about 2 to 3 hours.
  7. 7. Remove the tongue from the broth and let it cool down.
  8. 8. Peel the skin off the cooled tongue.
  9. 9. Set aside the remaining broth.
  10. 10. Melt the butter in a pot.
  11. 11. Stir in the flour and sauté it briefly.
  12. 12. Add the wine and 100 milliliters of the broth.
  13. 13. Let the mixture come to a slow boil while stirring.
  14. 14. Crumble the honey cake.
  15. 15. Puree the cake with 4 to 5 tablespoons of the broth.
  16. 16. Add the lemon juice and lemon zest to the pot.
  17. 17. Add the almonds and raisins.
  18. 18. Bring the sauce to a boil again.
  19. 19. Season the sauce with salt.
  20. 20. Slice the tongue.
  21. 21. Add the tongue slices to the sauce.
  22. 22. Heat the tongue in the sauce.
  23. 23. Serve the dish with mashed potatoes if desired.
