🍽️ Tender Beef Tongue in Honey Sauce

Ingredients
- 1 beef tongue
- 1 bunch soup vegetables
- 1 onion
- salt
- 1 slice honey cake
- 2 tbsp butter
- 1 tbsp flour
- 0.5 lemon (juice and grated zest)
- 100 ml dry white wine
- 2 tbsp raisins
- 2 tbsp chopped almond kernels

Instructions
- 1. Rinse the beef tongue under running water and cut off any hard parts.
- 2. Wash the soup vegetables, clean them, and peel them if necessary.
- 3. Peel the onion and chop everything roughly.
- 4. Place the vegetables and the tongue in a pot.
- 5. Cover everything with water.
- 6. Simmer the tongue for about 2 to 3 hours.
- 7. Remove the tongue from the broth and let it cool down.
- 8. Peel the skin off the cooled tongue.
- 9. Set aside the remaining broth.
- 10. Melt the butter in a pot.
- 11. Stir in the flour and sauté it briefly.
- 12. Add the wine and 100 milliliters of the broth.
- 13. Let the mixture come to a slow boil while stirring.
- 14. Crumble the honey cake.
- 15. Puree the cake with 4 to 5 tablespoons of the broth.
- 16. Add the lemon juice and lemon zest to the pot.
- 17. Add the almonds and raisins.
- 18. Bring the sauce to a boil again.
- 19. Season the sauce with salt.
- 20. Slice the tongue.
- 21. Add the tongue slices to the sauce.
- 22. Heat the tongue in the sauce.
- 23. Serve the dish with mashed potatoes if desired.
