🍽️ Juicy Beef Steaks with Homemade Herb Butter

Ingredients
- Herb Butter
- 100 g soft butter
- 2 tbsp finely chopped herbs
- salt
- pepper (from the mill)
- 0.5 tsp lemon juice
- 4 beef steaks (e.g. rump steaks) approx. 200 - 250 g each
- 2 tbsp clarified butter
- salt
- pepper (from the mill)
- 1 radicchio
- 1 piece zucchini
Instructions
- 1. Take the butter and stir the finely chopped herbs into it vigorously with a fork.
- 2. Season the butter mixture with a pinch of salt, freshly ground pepper, and a splash of lemon juice.
- 3. Place a piece of cling film on your work surface and put the seasoned butter in the center.
- 4. Roll the film tightly around the butter to form a compact, cylindrical log.
- 5. Seal the ends of the film well so that nothing can escape.
- 6. Place the butter log in the refrigerator for 1 to 2 hours to let it firm up.
- 7. Heat a frying pan and add some butter until it foams.
- 8. Place the beef steaks into the hot pan.
- 9. Fry the steaks for about 3 to 5 minutes on each side, depending on your preferred level of doneness.
- 10. Salt and pepper the steaks to taste while they are frying.
- 11. Remove the cooked steaks from the pan.
- 12. Wrap the steaks briefly in aluminum foil to let them rest and finish cooking.
- 13. Cut thick slices from the cold herb butter.
- 14. Place the steaks on the plates and put one slice of herb butter on top of each.
- 15. Garnish the dish with a few leaves of radicchio and thin slices of zucchini.
