🍽️ Juicy beef steaks with creamy cheese sauce

Ingredients
- 4 beef steaks approx. 220 g (e.g. ribeye)
- salt
- 2 tbsp vegetable oil
- 40 ml cognac
- 250 ml beef stock
- 100 ml whipping cream
- 1 tsp peppercorns
- 2 fresh garlic cloves
- 50 g grated parmesan
- 1 tbsp freshly chopped parsley
Instructions
- 1. Preheat the oven to 100 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the beef steaks briefly under running water. Then pat them completely dry with kitchen paper.
- 3. Season the steaks generously with salt.
- 4. Heat oil in a large frying pan.
- 5. Sear the steaks in the hot pan for 1 to 2 minutes on each side until they are brown.
- 6. Remove the steaks from the pan and place them on a wire rack.
- 7. Place a drip pan or baking sheet under the rack to catch any dripping fat.
- 8. Slide the rack with the steaks into the oven on the middle rail.
- 9. Let the steaks cook in the oven. The time is 8 to 20 minutes, depending on the thickness of the meat and how well done you like it.
- 10. Pour out the cooking fat from the pan you used to sear the steaks.
- 11. Deglaze the remaining browned bits (fond) in the pan with cognac.
- 12. Pour beef stock into the pan.
- 13. Bring the sauce to a boil.
- 14. Let the sauce reduce briefly to thicken it slightly.
- 15. Stir the cream into the sauce.
- 16. Let the sauce simmer for a few minutes.
- 17. Stir the sauce occasionally with a whisk until it becomes slightly creamy.
- 18. Crush black pepper in a mortar.
- 19. Add the ground pepper to the sauce.
- 20. Finally, season the sauce to taste with salt.
- 21. Remove the steaks from the oven.
- 22. Switch the oven to the grill setting.
- 23. Peel a clove of garlic.
- 24. Finely chop the garlic.
- 25. Spread the chopped garlic and grated Parmesan over the steaks.
- 26. Melt the cheese under the hot grill.
- 27. Fill the finished sauce into small bowls.
- 28. Sprinkle fresh parsley over the sauce.
- 29. Serve the sauce together with the steaks.
- 30. Serve french fries and a fresh salad on the side as desired.
