  1. 1. Preheat the oven to 100 degrees Celsius using the top and bottom heat setting.
  2. 2. Rinse the beef steaks briefly under running water. Then pat them completely dry with kitchen paper.
  3. 3. Season the steaks generously with salt.
  4. 4. Heat oil in a large frying pan.
  5. 5. Sear the steaks in the hot pan for 1 to 2 minutes on each side until they are brown.
  6. 6. Remove the steaks from the pan and place them on a wire rack.
  7. 7. Place a drip pan or baking sheet under the rack to catch any dripping fat.
  8. 8. Slide the rack with the steaks into the oven on the middle rail.
  9. 9. Let the steaks cook in the oven. The time is 8 to 20 minutes, depending on the thickness of the meat and how well done you like it.
  10. 10. Pour out the cooking fat from the pan you used to sear the steaks.
  11. 11. Deglaze the remaining browned bits (fond) in the pan with cognac.
  12. 12. Pour beef stock into the pan.
