  1. 1. Rinse the beef steaks briefly under running water.
  2. 2. Pat the steaks completely dry with a kitchen towel.
  3. 3. Season the steaks generously with salt and pepper.
  4. 4. Heat some oil in a large pan.
  5. 5. Sear the steaks for about 2 minutes until golden brown.
  6. 6. Turn the steaks in the pan.
  7. 7. Fry the steaks for another 2 minutes.
  8. 8. Reduce the heat on the stove.
  9. 9. Continue cooking the meat until it reaches your desired level of doneness.
  10. 10. For medium doneness, you need approx. 2 minutes per side.
  11. 11. Peel the garlic cloves.
  12. 12. Mash the garlic with a pinch of salt into a fine paste.
  13. 13. Rinse the fresh herbs briefly.
  14. 14. Shake the herbs dry.
  15. 15. Set aside a few sprigs of the herbs for decoration.
  16. 16. Pick the parsley leaves off the stems.
  17. 17. Chop the parsley leaves finely.
  18. 18. Cut the chives into small rings.
  19. 19. Mix the chives and chopped parsley with the butter.
  20. 20. Stir the quark into the butter mixture.
  21. 21. Stir the garlic paste into the butter mixture.
  22. 22. Season the cream with salt, lemon juice, and pepper.
  23. 23. Place the finished steaks on plates.
  24. 24. Top each steak with a portion of the herb-quark cream.
  25. 25. Garnish the dish with the remaining fresh herbs.
  26. 26. Add boiled potatoes in the skin if you like.
