🍽️ Grilled Beef Skewers with Asparagus and Flatbread

Ingredients
- 600 g beef fillet (kitchen-ready, trimmed)
- 1 clove garlic
- 1 tsp fennel seeds
- 1 tsp coriander seeds
- 1 tbsp white wine vinegar
- olive oil
- 600 g green asparagus
- salt
- sugar
- sea salt
Instructions
- 1. Rinse the meat under cold water and pat it completely dry with a kitchen towel.
- 2. Cut the meat into 12 equal slices.
- 3. Peel the garlic clove and chop it finely.
- 4. Mix the chopped garlic with the fennel seeds, coriander seeds, vinegar, and 6 tablespoons of oil in a bowl.
- 5. Place the meat slices in the marinade, cover the bowl, and refrigerate for 2 hours.
- 6. Peel the bottom third of the asparagus spears and remove the woody ends.
- 7. Bring water with salt and a pinch of sugar to a boil.
- 8. Cook the asparagus in the boiling water for approx. 12 minutes.
- 9. Drain the asparagus, shock it with cold water, and let it drain well.
- 10. Preheat the grill.
- 11. Take the meat slices out of the marinade.
- 12. Thread 3 meat slices onto each wooden skewer.
- 13. Grill the skewers all around for approx. 8 to 10 minutes.
- 14. Place the asparagus in a grilling pan and drizzle it with a little oil.
- 15. Grill the asparagus briefly as well.
- 16. Brush the meat with the marinade repeatedly while grilling.
- 17. Arrange the finished skewers with the asparagus on plates.
- 18. Sprinkle the dish with sea salt and serve.
- 19. Serve with garlic-rosemary flatbread and saffron aioli as desired.
