  1. 1. Season the beef generously with salt and pepper.
  2. 2. Add all marinade ingredients to a pot.
  3. 3. Place the meat into the marinade.
  4. 4. Let the meat marinate covered at room temperature for approx. 8 hours.
  5. 5. Turn the meat several times during the marinating process.
  6. 6. Remove the meat from the marinade and let it drain.
  7. 7. Pat the meat dry with kitchen paper.
  8. 8. Heat the butter in a casserole dish.
  9. 9. Sear the meat in the hot butter.
  10. 10. Pour the meat stock over the meat.
  11. 11. Place the lid on the casserole dish.
  12. 12. Place the casserole in the preheated oven at 180 degrees Celsius.
  13. 13. Braise the meat for approx. 40 minutes.
  14. 14. Pour the strained marinade over the meat.
  15. 15. Braise the meat for another 60 minutes uncovered.
  16. 16. Thicken the sauce with mixed cornstarch if necessary.
  17. 17. Clean the mushrooms.
  18. 18. Fry the mushrooms in a non-stick pan in butter.
  19. 19. Add the mushrooms to the meat in the last 5 minutes.
  20. 20. Slice the meat.
  21. 21. Serve the meat with the mushrooms and sauce on a platter.
