🍽️ Tender Beef Stew

Ingredients
- 1 kg beef (from the top round)
- 400 ml red wine
- 2 stalks celery
- 2 carrots
- 2 onions
- 2 garlic cloves (finely chopped)
- 3 tbsp ghee
- salt
- pepper (from the mill)
- 2 cloves
- 1 bay leaf
- 1 can peeled tomatoes
- 250 ml meat broth
- nutmeg
Instructions
- 1. Dice the celery, carrots, and onions into small, fine cubes.
- 2. Heat clarified butter in a large pot.
- 3. Sear the beef on all sides.
- 4. Add the chopped vegetables, garlic, bay leaves, and cloves.
- 5. Sauté everything briefly.
- 6. Deglaze with red wine.
- 7. Add the broth and tomatoes.
- 8. Place the lid on the pot.
- 9. Simmer the stew on very low heat for about 3 hours.
- 10. Remove the meat from the pot.
- 11. Keep the meat warm.
- 12. Strain the sauce through a sieve.
- 13. Reduce the sauce over high heat to about 300 ml.
- 14. Stir the vegetables back into the sauce.
- 15. Season with nutmeg, salt, and pepper.
- 16. Serve the stew with the sliced meat.
