  1. 1. Dice the celery, carrots, and onions into small, fine cubes.
  2. 2. Heat clarified butter in a large pot.
  3. 3. Sear the beef on all sides.
  4. 4. Add the chopped vegetables, garlic, bay leaves, and cloves.
  5. 5. Sauté everything briefly.
  6. 6. Deglaze with red wine.
  7. 7. Add the broth and tomatoes.
  8. 8. Place the lid on the pot.
  9. 9. Simmer the stew on very low heat for about 3 hours.
  10. 10. Remove the meat from the pot.
  11. 11. Keep the meat warm.
  12. 12. Strain the sauce through a sieve.
  13. 13. Reduce the sauce over high heat to about 300 ml.
  14. 14. Stir the vegetables back into the sauce.
  15. 15. Season with nutmeg, salt, and pepper.
  16. 16. Serve the stew with the sliced meat.
