🍽️ Tender Beef and Pumpkin Ragout

Ingredients
- 500 g beef (from the top round)
- 500 g pumpkin flesh (without seeds, roughly chopped)
- bell peppers (1 green and 1 red, cleaned, halved, seeded and cut into thin strips)
- 1 onion (peeled and diced)
- 1 tbsp ghee
- 250 ml beef broth
- 2 tsp paprika powder
- 1 tsp curry powder
- 2 tsp thyme leaves
- salt
- pepper (from the mill)
Instructions
- 1. Cut the beef into thin strips.
- 2. Heat butter in a large pan.
- 3. Sear the meat strips in batches until browned.
- 4. Remove the seared meat from the pan and set it aside.
- 5. Sauté the onions in the remaining fat until soft.
- 6. Return the meat to the pan with the onions.
- 7. Stir everything well to combine.
- 8. Pour the broth over the mixture.
- 9. Simmer the ragout covered for about 30 minutes.
- 10. Stir in the paprika, curry powder, paprika powder, thyme, and pumpkin.
- 11. Season the dish with salt and pepper to taste.
- 12. Simmer the ragout covered for another 30 minutes.
- 13. Check if the pumpkin is soft.
- 14. Taste the ragout one last time and adjust seasoning if needed.
- 15. Serve the finished dish.
