  1. 1. Preheat your oven to 160 degrees Celsius using the top and bottom heat setting.
  2. 2. Rinse the meat under cold water and pat it completely dry with kitchen paper.
  3. 3. Season the meat generously with salt and pepper.
  4. 4. Heat oil in a large frying pan and sear the meat on all sides until it forms a brown crust.
  5. 5. Place the meat on a roasting rack. Position a drip tray underneath to catch the fat.
  6. 6. Place the rack with the meat in the preheated oven and roast for 30 to 45 minutes. The exact time depends on the thickness of your meat.
  7. 7. Take the stale bread roll and place it briefly in a bowl of water to soften it.
  8. 8. Wash the fresh herbs under cold water and shake them dry.
  9. 9. Pluck the small leaves from the stems and twigs and chop them finely.
  10. 10. Rinse the lemon under hot water. Grate the zest of half the lemon finely to get the peel.
  11. 11. Peel the garlic cloves and press them through a garlic press.
  12. 12. Mix the pressed garlic with the finely chopped herbs in a bowl.
  13. 13. Squeeze the soaked bread roll well so that no water remains.
  14. 14. Crumble the bread roll into small pieces using your fingers.
  15. 15. Mix the bread pieces with the herb-garlic mixture, the egg yolk, and the soft butter.
  16. 16. Finally season the crust mixture with salt, pepper, and a small splash of lemon juice.
  17. 17. Remove the meat from the oven about 5 minutes before the end of the cooking time.
  18. 18. Spread the herb-bread mixture evenly over the surface of the beef loin.
  19. 19. Wash the tomatoes under running water.
  20. 20. Cut the washed tomatoes in half through the middle to create two halves.
