🍽️ Juicy Beef Tenderloin with Crunchy Herb-Nut Crust

Ingredients
- 750 g beef tenderloin
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- 2 tbsp freshly chopped parsley
- 1 tbsp freshly chopped coriander
- 150 g soft butter
- 4 tbsp breadcrumbs
- 1 egg yolk
- 40 g chopped walnuts
Instructions
- 1. Preheat your oven to 160 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the piece of meat under running water and then pat it completely dry with kitchen paper.
- 3. Season the meat generously with salt and pepper.
- 4. Heat oil in a frying pan and sear the meat on all sides until it has a brown crust.
- 5. Place the meat on a rack set over a drip pan and put it in the preheated oven.
- 6. Roast the meat in the oven for 30 to 45 minutes. The exact time depends on the thickness of the meat.
- 7. Mix the fresh herbs, butter, breadcrumbs, egg yolk, and nuts in a bowl to form a homogeneous mass.
- 8. Season the herb-nut mixture one last time with salt and pepper.
- 9. Remove the meat from the oven about 5 minutes before the end of the cooking time.
- 10. Spread the herb-nut mixture evenly over the entire surface of the meat.
- 11. Place the meat with the crust back into the oven until the cooking time has completely elapsed.
