  1. 1. Preheat your oven to 160 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Rinse the piece of meat under running water and then pat it completely dry with kitchen paper.
  3. 3. Season the meat generously with salt and pepper.
  4. 4. Heat oil in a frying pan and sear the meat on all sides until it has a brown crust.
  5. 5. Place the meat on a rack set over a drip pan and put it in the preheated oven.
  6. 6. Roast the meat in the oven for 30 to 45 minutes. The exact time depends on the thickness of the meat.
  7. 7. Mix the fresh herbs, butter, breadcrumbs, egg yolk, and nuts in a bowl to form a homogeneous mass.
  8. 8. Season the herb-nut mixture one last time with salt and pepper.
  9. 9. Remove the meat from the oven about 5 minutes before the end of the cooking time.
  10. 10. Spread the herb-nut mixture evenly over the entire surface of the meat.
  11. 11. Place the meat with the crust back into the oven until the cooking time has completely elapsed.
