🥗 Juicy beef sirloin steaks with crispy fries and fresh salad

Ingredients
- 4 beef hip steaks
- 2 tbsp butter
- 3 tbsp vegetable oil
- 2 tbsp herbs of Provence
- 0.5 bunch parsley
- 1 tbsp pink pepper
- 2 cooking onions
- 3 tbsp ghee
- 1 package frozen french fries
- 2 radicchio
- 1 red bell pepper
- 1 can corn
- 1 bunch spring onions
- 2 tbsp wine vinegar
- 6 tbsp vegetable oil
- salt
- pepper from the mill
Instructions
- 1. Prepare the french fries in the oven according to the package instructions.
- 2. Wash the parsley and chop it finely.
- 3. Mix the chopped parsley with the herbs, pink peppercorns, and one tablespoon of oil in a small bowl.
- 4. Wash the meat and pat it dry with kitchen paper.
- 5. Brush the steaks all over generously with the herb-oil mixture.
- 6. Heat butter and vegetable oil in a large frying pan.
- 7. Fry the steaks in batches, searing each side for about four minutes.
- 8. Remove the steaks from the pan and wrap them in aluminum foil.
- 9. Let the wrapped steaks rest for three minutes.
- 10. Heat ghee (clarified butter) in the same pan.
- 11. Peel the onions and slice them into thin rings.
- 12. Fry the onion rings until golden brown on all sides.
- 13. Wash the radicchio and separate the leaves into individual pieces.
- 14. Line a salad bowl with the radicchio leaves.
- 15. Trim and wash the spring onions.
- 16. Slice the spring onions into thin rings.
- 17. Mix the spring onion rings with the corn.
- 18. Halve the bell pepper and remove the core.
- 19. Wash the bell pepper halves and dice them finely.
- 20. Set aside the diced bell pepper and whisk vinegar, salt, oil, and pepper to make a marinade.
- 21. Add the diced bell pepper and the corn-onion mixture to the radicchio in the bowl.
- 22. Toss the ingredients in the salad bowl gently.
- 23. Pour the marinade over the salad and mix everything well.
- 24. Remove the steaks from the aluminum foil.
- 25. Garnish the steaks with the fried onion rings.
- 26. Serve the steaks together with the french fries and the salad.
