  1. 1. Clean and wash the beans, removing any stems. Boil them in salted water for 8 minutes over medium heat. Immediately rinse them with cold water to stop the cooking process, then drain them well.
  2. 2. Peel and finely chop the shallot and garlic. Wash the tarragon, shake it dry, and chop it as well. Heat 1 tablespoon of oil in a pan. Sauté the shallot and garlic in it for 3 minutes over medium heat.
  3. 3. Add the beans and honey. Let them caramelize for about 4 minutes while constantly shaking the pan until they get a nice color. Season everything with salt, pepper, and the chopped tarragon.
  4. 4. While the beans are caramelizing, rinse the steaks and pat them dry. Season them with salt and pepper. Grill the steaks on a hot, oiled grill rack for 2 to 4 minutes on each side. Serve the steaks together with the tarragon beans on plates.
