🍽️ Beef hip steaks with tarragon beans

Ingredients
- 800 g beans (yellow and green)
- salt
- 1 shallot
- 1 clove garlic
- 3 sprigs tarragon
- 2 tbsp olive oil
- 1 tbsp honey
- pepper
- 800 g beef hip steak (4 beef hip steaks)
Instructions
- 1. Clean and wash the beans, removing any stems. Boil them in salted water for 8 minutes over medium heat. Immediately rinse them with cold water to stop the cooking process, then drain them well.
- 2. Peel and finely chop the shallot and garlic. Wash the tarragon, shake it dry, and chop it as well. Heat 1 tablespoon of oil in a pan. Sauté the shallot and garlic in it for 3 minutes over medium heat.
- 3. Add the beans and honey. Let them caramelize for about 4 minutes while constantly shaking the pan until they get a nice color. Season everything with salt, pepper, and the chopped tarragon.
- 4. While the beans are caramelizing, rinse the steaks and pat them dry. Season them with salt and pepper. Grill the steaks on a hot, oiled grill rack for 2 to 4 minutes on each side. Serve the steaks together with the tarragon beans on plates.
