  1. 1. Soak the bread roll in lukewarm water.
  2. 2. Peel the shallot and the garlic.
  3. 3. Finely chop the shallot and garlic.
  4. 4. Heat 1 tablespoon of oil in a frying pan.
  5. 5. Sauté the chopped onion mixture until translucent.
  6. 6. Remove the pan from the heat and let the mixture cool down.
  7. 7. Squeeze the soaked bread roll thoroughly.
  8. 8. Mix the minced meat with the egg, the mustard, the squeezed bread roll, and the cooled onion-garlic mixture.
  9. 9. Season the meat mixture with salt and pepper.
  10. 10. Heat the frying oil in a pot to approx. 165 degrees Celsius.
  11. 11. Check the oil temperature by dipping a wooden spoon handle into the oil: If air bubbles rise, it is hot enough.
  12. 12. Peel the potatoes.
  13. 13. Cut the potatoes into evenly thick sticks.
  14. 14. Pat the potato sticks dry.
  15. 15. Add the potatoes in batches to the hot oil.
  16. 16. Fry the potatoes for approx. 5 minutes until they are soft but not yet colored.
  17. 17. Lift the potatoes out of the oil and remove them for now.
  18. 18. Increase the oil temperature to approx. 190 degrees Celsius.
  19. 19. Add the potatoes again in batches to the oil.
  20. 20. Fry them for approx. 2 minutes until crispy and golden brown.
  21. 21. Remove the fries and let them drain well.
  22. 22. Sprinkle the fries with salt.
  23. 23. Shape 4 patties from the meat mixture.
  24. 24. Press the patties slightly flat.
  25. 25. Grill the patties on a hot grill for approx. 4 minutes on each side.
  26. 26. If necessary, let the patties cook through a bit more at the edges.
  27. 27. Wash the rocket (arugula).
  28. 28. Sort through and clean the rocket.
  29. 29. Spin-dry the rocket.
  30. 30. Wash the tomatoes.
  31. 31. Remove the stem area and seeds from the tomatoes.
  32. 32. Cut the tomato flesh into very small cubes.
  33. 33. Peel the onion and garlic.
  34. 34. Finely dice the onion and garlic.
  35. 35. Mix the tomato cubes with the onion, garlic, parsley, vinegar, and remaining oil.
  36. 36. Season the salad with salt, pepper, and a pinch of sugar.
  37. 37. Plate the fries, the burger steak, and the rocket.
  38. 38. Serve the dish with the tomato salad.
