🥗 Juicy beef patty steaks with crispy fries and fresh tomato-rocket salad

Ingredients
- 1 stale roll
- 1 shallot
- 1 garlic clove
- 5 tbsp olive oil
- 600 g ground beef
- 1 egg
- 1 tsp hot mustard
- salt
- pepper (from the mill)
- fat (for frying)
- 700 g large, waxy potatoes
- 1 bunch arugula
- 6 ripe tomatoes
- 1 red onion
- 1 garlic clove
- 1 tbsp freshly chopped parsley
- 2 tbsp white wine vinegar
- sugar (to taste)
Instructions
- 1. Soak the bread roll in lukewarm water.
- 2. Peel the shallot and the garlic.
- 3. Finely chop the shallot and garlic.
- 4. Heat 1 tablespoon of oil in a frying pan.
- 5. Sauté the chopped onion mixture until translucent.
- 6. Remove the pan from the heat and let the mixture cool down.
- 7. Squeeze the soaked bread roll thoroughly.
- 8. Mix the minced meat with the egg, the mustard, the squeezed bread roll, and the cooled onion-garlic mixture.
- 9. Season the meat mixture with salt and pepper.
- 10. Heat the frying oil in a pot to approx. 165 degrees Celsius.
- 11. Check the oil temperature by dipping a wooden spoon handle into the oil: If air bubbles rise, it is hot enough.
- 12. Peel the potatoes.
- 13. Cut the potatoes into evenly thick sticks.
- 14. Pat the potato sticks dry.
- 15. Add the potatoes in batches to the hot oil.
- 16. Fry the potatoes for approx. 5 minutes until they are soft but not yet colored.
- 17. Lift the potatoes out of the oil and remove them for now.
- 18. Increase the oil temperature to approx. 190 degrees Celsius.
- 19. Add the potatoes again in batches to the oil.
- 20. Fry them for approx. 2 minutes until crispy and golden brown.
- 21. Remove the fries and let them drain well.
- 22. Sprinkle the fries with salt.
- 23. Shape 4 patties from the meat mixture.
- 24. Press the patties slightly flat.
- 25. Grill the patties on a hot grill for approx. 4 minutes on each side.
- 26. If necessary, let the patties cook through a bit more at the edges.
- 27. Wash the rocket (arugula).
- 28. Sort through and clean the rocket.
- 29. Spin-dry the rocket.
- 30. Wash the tomatoes.
- 31. Remove the stem area and seeds from the tomatoes.
- 32. Cut the tomato flesh into very small cubes.
- 33. Peel the onion and garlic.
- 34. Finely dice the onion and garlic.
- 35. Mix the tomato cubes with the onion, garlic, parsley, vinegar, and remaining oil.
- 36. Season the salad with salt, pepper, and a pinch of sugar.
- 37. Plate the fries, the burger steak, and the rocket.
- 38. Serve the dish with the tomato salad.
