🍽️ Hearty Beef Goulash with Fresh Herbs

Ingredients
- 800 g beef (e.g. from the shoulder or top round)
- 2 onions
- 2 carrots
- 3 tbsp olive oil
- salt
- pepper
- 1 clove garlic
- 3 sprigs thyme
- 3 stalks oregano
- 1 tbsp balsamic vinegar
- 250 ml beef broth
- 600 g pureed tomatoes
Instructions
- 1. Rinse the beef under cold water and pat it dry with kitchen paper.
- 2. Cut the meat into cubes of approx. 2 to 3 cm.
- 3. Peel the onions and cut them in half.
- 4. Cut the onion halves into thin strips.
- 5. Peel the carrots and cut them into cubes.
- 6. Heat the olive oil in a wide pot.
- 7. Sear the beef over high heat for about 6 minutes, turning it on all sides.
- 8. Add the onions and carrots to the meat.
- 9. Cook the vegetables with the meat for 5 minutes.
- 10. Season the mixture with salt and pepper.
- 11. Peel the garlic and chop it finely.
- 12. Wash the herbs and pluck the leaves from 2 sprigs each.
- 13. Chop the herb leaves.
- 14. Add the chopped garlic and herbs to the goulash.
- 15. Deglaze the dish with balsamic vinegar.
- 16. Pour in the broth.
- 17. Let the liquid reduce over low heat for about 5 minutes.
- 18. Add the tomatoes to the goulash.
- 19. Cover the pot.
- 20. Simmer the goulash over low heat for 2.5 to 3 hours.
- 21. Stir the goulash occasionally.
- 22. Add more liquid if necessary.
- 23. Season the finished goulash with salt and pepper.
- 24. Transfer the goulash to a large bowl.
- 25. Garnish it with the remaining fresh herbs.
- 26. Serve the goulash with fresh rye bread as desired.
