  1. 1. Rinse the beef under cold water and pat it dry with kitchen paper.
  2. 2. Cut the meat into cubes of approx. 2 to 3 cm.
  3. 3. Peel the onions and cut them in half.
  4. 4. Cut the onion halves into thin strips.
  5. 5. Peel the carrots and cut them into cubes.
  6. 6. Heat the olive oil in a wide pot.
  7. 7. Sear the beef over high heat for about 6 minutes, turning it on all sides.
  8. 8. Add the onions and carrots to the meat.
  9. 9. Cook the vegetables with the meat for 5 minutes.
  10. 10. Season the mixture with salt and pepper.
  11. 11. Peel the garlic and chop it finely.
  12. 12. Wash the herbs and pluck the leaves from 2 sprigs each.
  13. 13. Chop the herb leaves.
  14. 14. Add the chopped garlic and herbs to the goulash.
  15. 15. Deglaze the dish with balsamic vinegar.
  16. 16. Pour in the broth.
  17. 17. Let the liquid reduce over low heat for about 5 minutes.
  18. 18. Add the tomatoes to the goulash.
  19. 19. Cover the pot.
  20. 20. Simmer the goulash over low heat for 2.5 to 3 hours.
  21. 21. Stir the goulash occasionally.
  22. 22. Add more liquid if necessary.
  23. 23. Season the finished goulash with salt and pepper.
  24. 24. Transfer the goulash to a large bowl.
  25. 25. Garnish it with the remaining fresh herbs.
  26. 26. Serve the goulash with fresh rye bread as desired.
