Ingredients
- 4 large red onions
- 4 thick slices beef fillets (kitchen-ready about 3 cm thick)
- 1 tbsp coriander seeds
- 1 tbsp olive oil
- salt
- pepper (from the mill)
- fresh basil
Instructions
- 1. Peel the onions.
- 2. Cut the onions crosswise into three thick slices.
- 3. Heat oil in a pan.
- 4. Fry the onion slices briefly and firmly on both sides.
- 5. Lightly crush coriander seeds in a mortar.
- 6. Sprinkle the crushed coriander seeds over the onions.
- 7. Season the onions with salt and pepper.
- 8. Remove the onions from the pan and set them aside briefly.
- 9. Wash the basil leaves.
- 10. Pat the basil leaves dry.
- 11. Fry the beef fillet in some oil for 4 minutes on both sides.
- 12. Ensure that the meat remains pink inside.
- 13. Salt and pepper the beef fillet.
- 14. Stack the onion slices in a tower-like manner on the tournedos.
- 15. Garnish the dish with the basil leaves.
- 16. Serve the fillet immediately.
- 17. Serve the Worcestershire sauce on the side.
