🍽️ Juicy Beef Fillet with Creamy Spinach Filling

Ingredients
- 200 g spinach leaves
- salt
- 2 tbsp pine nuts
- 1 shallot
- 6 garlic cloves
- 4 tbsp vegetable oil
- 125 g blue cheese (e.g. Saint Agur)
- nutmeg (freshly grated)
- pepper (from the mill)
- 700 g beef fillet (ready for cooking)
Instructions
- 1. Wash the spinach thoroughly.
- 2. Bring water to a boil and add some salt.
- 3. Blanch the spinach briefly in this boiling salted water (cook briefly in boiling water).
- 4. Drain the spinach.
- 5. Shock the spinach to stop the cooking process.
- 6. Squeeze the spinach well to remove excess liquid.
- 7. Heat a pan without fat.
- 8. Roast the pine nuts in the pan until fragrant.
- 9. Remove the pine nuts from the pan and set them aside.
- 10. Peel the shallot and the garlic.
- 11. Dice the shallot finely.
- 12. Chop the garlic coarsely.
- 13. Heat 1 tablespoon of oil in a pan.
- 14. Sauté the shallot and garlic until translucent.
- 15. Dice the cheese into small pieces.
- 16. Remove the pan from the heat.
- 17. Mix the squeezed spinach and cheese with the shallot-garlic mixture.
- 18. Season the filling generously with salt, pepper, and nutmeg.
- 19. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 20. Wash the beef fillet.
- 21. Pat the fillet dry.
- 22. Remove the sinews from the fillet.
- 23. Cut a pocket lengthwise into the fillet using a sharp knife.
- 24. Fill the pocket with the spinach mixture.
- 25. Sprinkle the roasted pine nuts over the filling.
- 26. Tie the fillet in shape with kitchen twine.
- 27. Heat the remaining oil in a pan.
- 28. Sear the fillet on all sides until brown.
- 29. Cook the fillet for 6 to 8 minutes.
- 30. Place the fillet on a rack.
- 31. Place a drip pan under the rack.
- 32. Cook the fillet in the oven for 25 to 30 minutes.
- 33. Let the fillet rest briefly.
- 34. Remove the kitchen twine.
- 35. Slice the fillet.
- 36. Serve the fillet.
