  2. 2. Season the meat generously with salt and pepper.
  3. 3. Heat the rapeseed oil in a large pan.
  4. 4. Sear the fillet on all sides until browned.
  5. 5. Let the meat cool down completely.
  6. 6. Clean the mushrooms and chop them finely.
  7. 7. Peel the shallots and cut them into fine cubes.
  8. 8. Heat the butter in a clean pan.
  9. 9. Fry the mushrooms and shallots while stirring occasionally.
  10. 10. Cook the mushroom mixture until it has changed color.
  11. 11. Season the mushroom mixture with salt and pepper.
  12. 12. Remove the mushroom mixture from the pan.
  13. 13. Spread the mushroom mixture onto a baking sheet.
  14. 14. Let the mushroom mixture cool down completely.
  15. 15. Wash the spinach thoroughly.
  16. 16. Place the spinach in a steamer insert over boiling water.
  17. 17. Steam the spinach until it has wilted.
  18. 18. Shock the spinach immediately in ice water.

  37. 37. Whisk the egg yolks.
  38. 38. Brush the puff pastry with the egg yolk.
  39. 39. Bake the fillet in the preheated oven for about 30 minutes until golden brown.
