🍽️ Juicy Beef Fillet in Crispy Puff Pastry with Spinach Filling

Ingredients
- 700 g beef fillet
- salt
- pepper (from the mill)
- 2 tbsp rapeseed oil
- 300 g mushrooms
- 2 shallots
- 30 g butter
- 2 handfuls large spinach leaves
- 4 slices white bread
- 400 g puff pastry (order from the baker in advance)
- flour (for the work surface)
- 2 egg yolks
Instructions
- 1. Remove any sinews from the beef fillet.
- 2. Season the meat generously with salt and pepper.
- 3. Heat the rapeseed oil in a large pan.
- 4. Sear the fillet on all sides until browned.
- 5. Let the meat cool down completely.
- 6. Clean the mushrooms and chop them finely.
- 7. Peel the shallots and cut them into fine cubes.
- 8. Heat the butter in a clean pan.
- 9. Fry the mushrooms and shallots while stirring occasionally.
- 10. Cook the mushroom mixture until it has changed color.
- 11. Season the mushroom mixture with salt and pepper.
- 12. Remove the mushroom mixture from the pan.
- 13. Spread the mushroom mixture onto a baking sheet.
- 14. Let the mushroom mixture cool down completely.
- 15. Wash the spinach thoroughly.
- 16. Place the spinach in a steamer insert over boiling water.
- 17. Steam the spinach until it has wilted.
- 18. Shock the spinach immediately in ice water.
- 19. Let the spinach drain well in a colander.
- 20. Spread the spinach leaves out on kitchen paper.
- 21. Pat the spinach leaves dry.
- 22. Remove the crust from the white bread.
- 23. Grate the bread into crumbs using a kitchen grater.
- 24. Dust the work surface with flour.
- 25. Roll out the puff pastry on the floured surface.
- 26. Ensure the pastry is about 10 cm longer than the fillet.
- 27. Ensure the pastry is about three times as wide as the fillet.
- 28. Wrap the cooled fillet in the dry spinach leaves.
- 29. Mix the cooled mushrooms with the bread crumbs.
- 30. Spread the mushroom-bread mixture on the lower half of the puff pastry.
- 31. Place the wrapped fillet on top of the mushroom mixture.
- 32. Fold the puff pastry over the fillet.
- 33. Press the edges of the pastry slightly.
- 34. Chill the fillet in puff pastry in the refrigerator for 30 minutes.
- 35. Preheat the oven to 200 degrees.
- 36. Carefully place the puff pastry onto a baking sheet lined with baking paper.
- 37. Whisk the egg yolks.
- 38. Brush the puff pastry with the egg yolk.
- 39. Bake the fillet in the preheated oven for about 30 minutes until golden brown.
