  3. 3. Coarsely crush the peppercorns and mustard seeds in a mortar.
  4. 4. Rub the meat all over with the ground spices.
  5. 5. Heat the ghee (clarified butter) in a large pan.
  6. 6. Sear the meat on all sides until it has a brown crust.
  7. 7. Wrap the seared meat tightly in aluminum foil.
  8. 8. Place the package in the preheated oven and bake for about 1 hour.
  9. 9. Check the core temperature, which should be around 60 degrees Celsius.
  10. 10. Bring the red wine to a boil in a pot with the lemon juice, sugar, cinnamon stick, and allspice berries.
  11. 11. Wash the apples thoroughly.
  12. 12. Peel the apples whole without cutting them apart.
  13. 13. Place the peeled apples into the hot wine liquid.
  14. 14. Let the apples cook over low heat for about 15 minutes.
  15. 15. Remove the meat from the oven after the cooking time.
  16. 16. Remove the aluminum foil from the meat.
  17. 17. Season the meat generously with salt to taste.
  18. 18. Let the meat rest for about 5 minutes before slicing.
