🍽️ Juicy Beef Fillet with Warm Red Wine Apples

Ingredients
- 800 g beef fillet
- 1 tsp peppercorns
- 0.5 tsp mustard seeds
- 4 tbsp ghee
- 400 ml dry red wine
- 1 lemon (juice)
- 30 g sugar
- 1 cinnamon stick
- 5 allspice berries
- 4 tart apples
- salt
- 150 g feta
- arugula (for garnish)
Instructions
- 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
- 2. Rinse the beef fillet under running water and pat it completely dry with kitchen paper.
- 3. Coarsely crush the peppercorns and mustard seeds in a mortar.
- 4. Rub the meat all over with the ground spices.
- 5. Heat the ghee (clarified butter) in a large pan.
- 6. Sear the meat on all sides until it has a brown crust.
- 7. Wrap the seared meat tightly in aluminum foil.
- 8. Place the package in the preheated oven and bake for about 1 hour.
- 9. Check the core temperature, which should be around 60 degrees Celsius.
- 10. Bring the red wine to a boil in a pot with the lemon juice, sugar, cinnamon stick, and allspice berries.
- 11. Wash the apples thoroughly.
- 12. Peel the apples whole without cutting them apart.
- 13. Place the peeled apples into the hot wine liquid.
- 14. Let the apples cook over low heat for about 15 minutes.
- 15. Remove the meat from the oven after the cooking time.
- 16. Remove the aluminum foil from the meat.
- 17. Season the meat generously with salt to taste.
- 18. Let the meat rest for about 5 minutes before slicing.
- 19. Crumble the feta cheese into small pieces using your hands.
- 20. Wash the arugula and shake it dry.
- 21. Slice the rested meat.
- 22. Arrange the meat slices on plates.
- 23. Add the arugula salad and the warm red wine apples.
- 24. Sprinkle the dish with the feta cheese and serve immediately.
