🍽️ Crispy Rösti with Juicy Beef Fillet

Ingredients
- 500 g kosher beef fillet (Jewish butcher)
- oil (for frying)
- salt
- pepper (from the mill)
- 8 starchy sweet potatoes
- 2 eggs
- 2 tbsp flour
- 1 tsp salt
- medium-hot mustard
Instructions
- 1. Rinse the beef fillet under cold water and pat it completely dry with kitchen paper.
- 2. Peel the potatoes and grate them finely using a grater.
- 3. Squeeze the grated potatoes with your hands or a cloth to remove excess liquid.
- 4. Add the remaining ingredients for the batter and mix everything thoroughly.
- 5. Heat plenty of oil in a large frying pan.
- 6. Drop the potato batter spoonful by spoonful into the hot oil to form small patties.
- 7. Fry the rösti sides until golden brown, starting with the first side.
- 8. Flip the patties and fry the second side until brown.
- 9. Add a little more oil to the pan if necessary.
- 10. Let the finished rösti drain on kitchen paper so they do not become too greasy.
- 11. Season the rösti with salt and pepper and keep them warm.
- 12. Heat oil in a casserole dish and sear the meat all over on high heat.
- 13. Reduce the heat and simmer the meat covered on medium heat for 10 to 15 minutes.
- 14. Season the meat with salt and pepper during the cooking process.
- 15. Remove the meat from the pan and slice it into thin pieces.
- 16. Deglaze the pan drippings (residue at the bottom of the pot) with 2 tablespoons of water.
- 17. Drizzle the meat slices with the resulting sauce.
- 18. Serve the meat together with the potato patties and mustard.
