🍽️ Juicy Beef Fillet with Creamy Polenta

Ingredients
- 2 young leek stalks
- 1 carrot
- 1 piece celery
- 300 g beef fillet
- pepper (from the mill)
- coriander powder
- 0.5 l beef broth
- salt
- 3 tbsp fine cornmeal
- 1 tbsp crème fraîche
Instructions
- 1. Wash the leek thoroughly.
- 2. Slit the leek lengthwise.
- 3. Remove any dirt residues.
- 4. Slice the leek into thin rings.
- 5. Peel the carrot.
- 6. Peel the celery.
- 7. Cut the carrot into very thin strips.
- 8. Cut the celery into very thin strips.
- 9. Slice the beef fillet into pieces about 1 centimeter thick.
- 10. Rub the beef slices generously with ground pepper.
- 11. Rub the beef slices generously with ground coriander.
- 12. Bring the beef broth to a boil in a pot.
- 13. Add the prepared vegetables to the boiling broth.
- 14. Let the vegetables cook for about 5 minutes.
- 15. Reduce the heat to a low setting.
- 16. Add the beef slices to the vegetables.
- 17. Let everything simmer gently under a lid for approx. 2 minutes.
- 18. Pour about one-third of the broth from the pot into a separate bowl.
- 19. Place the beef slices in the bowl to keep them warm.
- 20. Season the remaining vegetables with salt.
- 21. Stir in the cornmeal.
- 22. Stir in the Creme Fraîche.
- 23. Bring the mixture back to a brief boil.
- 24. Plate the warm beef.
- 25. Serve the beef together with the creamy vegetable polenta.
