🍽️ Juicy Beef Fillet with Sweet Creamy Shallots

Ingredients
- 800 g shallots
- 600 g beef fillet (whole)
- salt
- pepper
- 4 tbsp olive oil
- 2 tbsp liquid honey
- 250 ml white wine
- 1 clove garlic
- 5 sprigs thyme
- 200 ml whipping cream
Instructions
- 1. Peel the shallots and cut them in half lengthwise.
- 2. Season the beef fillet generously with salt and pepper.
- 3. Heat oil in a casserole dish and sear the meat on all sides until browned.
- 4. Remove the meat from the pot and set it aside for now.
- 5. Add the shallots to the pot and sauté them briefly.
- 6. Stir in the honey and let it caramelize briefly.
- 7. Deglaze the shallots with the wine.
- 8. Place the beef fillet back into the pot.
- 9. Cover the pot and braise the meat for 8 to 10 minutes on each side.
- 10. Remove the meat and wrap it in aluminum foil to let it rest.
- 11. Finely chop the garlic and thyme leaves.
- 12. Add the chopped herbs and cream to the sauce in the pot.
- 13. Simmer the sauce uncovered for 8 minutes until it thickens.
- 14. Season the sauce to taste with salt and pepper.
- 15. Slice the beef fillet.
- 16. Plate the meat with the shallots and serve.
