🍽️ Juicy Beef Fillet Wrapped in Crispy Puff Pastry

Ingredients
- 250 g Whole grain puff pastry
- 300 g Mushrooms
- 1 small Onion
- 1 tbsp Butter
- 2 tbsp Crème fraîche
- 0.5 tsp Mustard
- 750 g Beef fillet (preferably the thick end)
- black pepper
- 2 tbsp Ghee
- salt
- 1 tbsp Sherry vinegar
- 0.5 tsp Thyme
- Spelt whole wheat flour (for the work surface)
- 1 Egg yolk
Instructions
- 1. Clean the mushrooms of dirt and chop them finely.
- 2. Peel the onion and cut it into small cubes.
- 3. Heat one tablespoon of butter in a pan.
- 4. Sauté the onion cubes until translucent.
- 5. Add the chopped mushrooms to the pan.
- 6. Cook the mushrooms until all released liquid has evaporated.
- 7. Remove the pan from the heat and let the mushroom-onion mixture cool down completely.
- 8. Remove all sinews and fat edges from the beef fillet.
- 9. Season the meat generously with black pepper.
- 10. Sear the fillet on all sides in clarified butter.
- 11. Remove the meat from the pan and let it cool.
- 12. Mix the cooled mushroom-onion mixture with crème fraîche.
- 13. Add mustard and fresh thyme leaves to the mixture.
- 14. Season to taste with sherry vinegar, salt, and pepper.
- 15. Place the duxelles mixture in the refrigerator until needed.
- 16. Roll out the puff pastry into a long rectangle on a work surface.
- 17. Place the cooled beef fillet in the center of the pastry.
- 18. Spread the cold mushroom mixture evenly over the meat.
- 19. Carefully fold the puff pastry over the meat.
- 20. Press the edges and seams firmly together to seal the pastry.
- 21. Rinse a baking sheet with cold water and place the fillet package on it.
- 22. Brush the surface of the pastry with egg yolk.
- 23. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
- 24. Bake the fillet for about 30 minutes until golden brown.
- 25. Turn off the oven after the baking time.
- 26. Let the meat rest in the cooling oven for at least 15 minutes.
- 27. Slice the fillet into thick pieces.
- 28. Garnish the plates as desired with tomatoes and parsley.
