  1. 1. Clean the mushrooms of dirt and chop them finely.
  2. 2. Peel the onion and cut it into small cubes.
  3. 3. Heat one tablespoon of butter in a pan.
  4. 4. Sauté the onion cubes until translucent.
  5. 5. Add the chopped mushrooms to the pan.
  6. 6. Cook the mushrooms until all released liquid has evaporated.
  7. 7. Remove the pan from the heat and let the mushroom-onion mixture cool down completely.
  8. 8. Remove all sinews and fat edges from the beef fillet.
  9. 9. Season the meat generously with black pepper.
  10. 10. Sear the fillet on all sides in clarified butter.
  11. 11. Remove the meat from the pan and let it cool.
  12. 12. Mix the cooled mushroom-onion mixture with crème fraîche.
  13. 13. Add mustard and fresh thyme leaves to the mixture.
  14. 14. Season to taste with sherry vinegar, salt, and pepper.
  15. 15. Place the duxelles mixture in the refrigerator until needed.
  16. 16. Roll out the puff pastry into a long rectangle on a work surface.
  17. 17. Place the cooled beef fillet in the center of the pastry.
  18. 18. Spread the cold mushroom mixture evenly over the meat.
  19. 19. Carefully fold the puff pastry over the meat.
  20. 20. Press the edges and seams firmly together to seal the pastry.
  21. 21. Rinse a baking sheet with cold water and place the fillet package on it.
  22. 22. Brush the surface of the pastry with egg yolk.
  23. 23. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
  24. 24. Bake the fillet for about 30 minutes until golden brown.
  25. 25. Turn off the oven after the baking time.
  26. 26. Let the meat rest in the cooling oven for at least 15 minutes.
  27. 27. Slice the fillet into thick pieces.
  28. 28. Garnish the plates as desired with tomatoes and parsley.
